My man!! I am going through the same. There's a feeling of accomplishment that you get from fixing things in your own home. It's hard to describe, but it's unlike anything else! I'm going to make man sounds now like Tim the Tool man Taylor...
Pro tip, for those that get it too thick and don't want to go out and buy a new roll, just use a utility knife while it's all rolled up and start cutting right in half until you can't anymore, then just go DEEPER. A utility knife will cut through 50% of a roll and that's probably less than what you'll use on one side of a door anyway.

And where did U get the vinyl door sweep? My local home depot only has metal which makes cutting a lot more complicated. Though I do not know how long the vinyl may last for exterior door expose to the sun.
This is one of those jobs that will have to be done again, in some years. By then you will have forgotten what did and didn't work. Suggestion: keep notes and file them where you keep your home repair/maintenance records.
