    This roasted vegetable pasta is a great hearty and healthy weeknight meal. You'll love the roasted vegetables and garlicky sauce along with the soft and melty mozzarella balls. Use whole wheat pasta for a bit more nutrition or choose your favorite traditional pasta.

    ROASTED VEGETABLE PASTA
    Serves 4-6

    INGREDIENTS:
    10.5 ounces (151 g) Whole Wheat Rotini Pasta
    3 cups eggplant
    2 cups cubed zucchini
    1 cup onion, chopped
    2 tbsp olive oil
    salt and pepper to taste
    ½ tsp dried basil seasoning
    ½ tsp dried oregano
    2 cans of pure tomato sauce/tomato puree
    2 garlic cloves
    1 8-ounce package of fresh Mozzarella balls
    1/4 cup fresh Italian parsley, chopped
    METHOD:
    Preheat the oven to 425F (215C).
    Place the eggplant, zucchini, and onion on a sheet pan. Drizzle with the olive oil. Add the salt and pepper to taste, along with the dried basil and oregano. Toss to coat. Roast the vegetables for 25 minutes.
    Meanwhile, boil the pasta according to package instructions.
    In a large sauce pot, add the tomato sauce, and the garlic and simmer on low until the vegetables are done.
    Once the vegetables are ready add them to the sauce. Drain the pasta and add it to the sauce along with the mozzarella balls. Spoon into pasta bowls and top with the fresh parsley.

    Delicious! And I love to see the Portmeiron pasta bowl. About 10 years ago I saw Portmeiron for the first time on vacation in London at Liberty‘s - and fell for it. So nice to see it made all the way to the other side of the world.

      Oh yes, I fell for those bowls right away! I saw them on Amazon and bought the pasta bowls and the serving bowl. They’re so beautifully made and perfect for food photography because you can actually see the food in them because they’re so nice and shallow. Ha ha!

    I’ve always roasted zucchini and squash together with pasta. I’m going to try it with the eggplant, sauce and the mozzarella balls. Thanks❤

      Oh yes, the eggplant gives a really nice hearty texture and the mozzarella balls are the best part. Make sure you stir them around in the sauce and pasta before serving so they get softened and warmed and a little bit gooey so yummy!!

    Nice recipe, I appreciate not having to watch you chop the eggplant, onion and zucchini. I think it’s our world where we want everything instantly. I get bored when I see someone chop the entire zucchini or the entire eggplant, etc. Nice to have you back. Happy New Year ❤

    Fantastic! Looks so delicious! We use the Barilla red lentil or chick pea pasta and it's really good, less carbs and chock full of protein and fiber. Just sharing that in case you've not yet tried them.

    That looks scrumptious! Pasta with sautéed or roasted veggies was always a favorite meal. Wish I'd thought to add ciliegine in! I'd add shredded mozzarella on top, but never thought of the pearls.
    I love your blouse and admire your bravery! If I tried to cook in it, I'd probably end up with sauce all over it! 😂

    The jarred garlic is always too big too! I don’t wNt to be chomping down on a big piece of garlic lol. The garlic press with fresh garlic is so much better.

    By the way, I just discovered celery salt, and it brings the tomato sauce to a next level. Of course there are some other spices I like to put in, but this one is really a game changer. I hope you have it in your country as well.

    In indian cooking we need a lot of ginger and garlic paste.... I just make a lot of it and freeze it in ice cube trays..... It stays well for a long time and you don't have to buy the store bought kind

    Looks so good Beth! I have made pasta similar to this but added olives and pine nuts and it’s so delicious!
    Can I ask what sheet pans you like best? I’m well over due for new ones and would love a recommendation!

    Thank you, Beth!! I was literally googling "eggplant recipes" 5 minutes before I started your video. I was also trying to figure out what to do with a large tin of tomato puree I bought by mistake a few months back. So, this is perfect. Also, I hate the jarred garlic, it always tastes so bad to me - I'm glad I'm not the only one.

    I would like to tell you that I subscribed to your channel after seeing your shrimp bisque recipe because you didn't cut corners; you made the stock from scratch and went through all the steps and described them well. Most of the time, people will ask you to watch a different video, go to their blogs to see it, or just use a store-bought video. I hate it, thats when I usually abandon the video, but you didn't do it, and it's rare to see it, so please make all videos like that go through the basics like that so a cook of any level can watch just a single video and cook it with confidence, and please add more vegan, vegetarian, or plant-based recipes because those are the ones I'm interested in right now. I adore this recipe. Thank you for sharing it.
