Roasted Vegetable Stuffed Pasta Shells

  • 🌿Ingredients:
    20 jumbo pasta shells, cooked as per package directions (I always cook a few extra in case they break)
    1 large zucchini, diced
    1 red bell pepper, diced
    1 green bell pepper, diced
    1 red onion, chopped
    1 carrot, diced
    5-6 cloves of garlic, chopped
    2 tsp chilli flakes (adjust as per liking)
    1 tsp dried oregano
    1 tsp dried basil
    Salt to taste
    1 tsp black pepper powder
    2 tbsp good quality olive oil
    1 cup ricotta cheese
    11/2 cup shredded mozzarella cheese
    1/2 cup spinach, blanched
    2 cups marinara sauce
    Chopped fresh basil, as needed
    👉Method:
    
    Add all the vegetables into a clean bowl along with garlic. Season chilli flakes, dried oregano, dried basil, salt, and black pepper. Drizzle the olive oil on top and give everything a good mix until well coated.
    Then transfer the vegetables to a lined baking tray and pop it in a preheated oven to roast for 20 minutes at 400° until tender stirring once.
    Wild vegetables, roast get the pasta ready. Follow the package directions and cook the pasta in salted water until al dente. Once the pasta has cooked, drain the water, pour some olive oil on top so the shells don’t stick together and set aside.
    Once the veggies are done, remove them from the oven and transfer to a clean mixing bowl. Add in the blanched spinach followed by ricotta cheese. Give this on a good mix until combined. Then carefully open the cooked pasta, shells and stuff each shell with a generous amount of the roasted veggies and ricotta cheese mixture. Continue the same process until all the shells are filled.
    Then pour one cup of the marinara sauce into the bottom of the baking dish and placed the stuffed shells on top. Sprinkle some fresh basil on top and then cover the shells with the remaining marinara sauce and mozzarella cheese.
    Cover the dish with an aluminum foil and bake for 30 minutes at 350° until sauce begins to bubble and the cheese is all melted. Garnish with fresh basil leaf, if desired, and serve warm.
    This stuffed shells recipe is an easy make ahead dish and grade for when you are hosting a get-together or dinner party.
