Cheesy Rice Balls | Easy & Yummy Appetizer

  • 🌿Ingredients:
    11/2 cup rice, pre-boiled
    1 small red onion, finely chopped
    3-4 cloves of garlic, chopped
    1/3 cup sun-dried tomatoes, sliced
    1 red chilli, sliced
    10-12 olives, chopped
    Salt to taste
    1 tsp chilli flakes
    2 medium size boiled potatoes, grated
    Handful of fresh parsley, chopped
    2 tsp corn flour (for binding)
    Mozzarella cheese, cut into cubes (as required)
    Oil for deep frying
    1 cup panko breadcrumbs
    2 tsp corn flour (for slurry)
    Water as required to prepare the corn flour slurry

    👉Method:
    For olive oil into a pan once heated, add the chopped garlic and sauté until fragrant. Then add the chopped onions and cook for about a minute until soft. Now add the sun dried tomatoes, red chilies, and olives sauté for a minute or two and then season with some salt to taste and chilli flakes. Give this all a good mix and then add in the boiled rice stir well to combine.
    Turn the store off and transfer the rice mixture to a bowl and allow it to cool down and come to room temperature. Then add the grated boiled potato as well as finally chopped parsley and give this all a good mix until combined.
    Then add the corn flour , mix well, and set aside.
    Then grease your palms with oil so that the mixture does not stick and shape the prepared rice mix into balls of desired size. Stuff each ball with a cube of mozzarella cheese and a tight bowl to enclose the cheese. Repeat the same process with the remaining rice mixture and set aside.
     To prepare the corn flour slurry, add 2 tsp of corn flour into a bowl and pour water as required to get a slurry like consistency. Roll each of the prepared rice balls in the corn flour slurry and then called them in Panko breadcrumbs. Repeat the same process with the remaining rice balls.
    Then carefully place the prepared rice balls in batches into the hot oil. Just make sure that you do not overcrowd the pan as that will cool down the oil. Deep fry the rice balls until golden Brown and enjoy them hot.
    You may serve these cheesy rice balls with chili mayo, or marinara sauce. These make for the perfect appetizer or snack.
