Farfalle with Spinach, Mushrooms & Caramelized Onions

  • 🌿Ingredients:
    1 1/2 Farfalle (Bow Tie shaped pasta)
    Water (as required to cook the pasta)
    2 tsp salt (to cook the pasta)
    1 tbsp olive oil
    4-5 cubes of butter
    6-7 mushroom, sliced
    1 small red onion, sliced
    1 small white onion, sliced
    5-6 cloves of garlic, thinly sliced
    1/2 cup sun-dried tomatoes
    Salt to taste
    1 tsp black pepper powder
    1 tsp dried oregano
    1 1/2 tsp red chilli flakes
    2 cups of baby spinach
    1 cup heavy cream
    Parmesan cheese
    👉Method:
    In a pot bring water to a boil add the pasta, some salt and cook until al dente.
    To prepare the sauce, pour some olive oil in a large pan and add a few cubes of butter. One melted add the sliced mushrooms, toss well and cook for 5 to 6 minutes until they start to brown up a bit.
    Then sliced onions and sauté for another 2 to 3 minutes. Thinly sliced garlic and cook for another 3 to 4 minutes. Now, add the sunrise tomatoes, season with some salt to taste, black pepper powder, oregano and chilli flakes. Give us all a good mix and then add the cooked pasta and toss well to combine.
    Now add the baby spinach and gently toss and cook until the spinach leaves are wilted. Finally wore the heavy cream and give everything a really good mix until combined. Cook for another 30 seconds, the stove off and the pasta is ready to serve.
    Sprinkle some fresh Parmesan cheese on top just before serving for that salty savoury goodness in every bite.
