Vegetarian Lasagna Roll Ups

  • ✨Ingredients:
    8 sheets of lasagna
    1 zucchini, thinly sliced
    Olive oil as required
    3 cups baby spinach, washed and dried
    1 cup ricotta cheese
    1/2 red onion, finely chopped
    3-4 cloves of garlic, finely chopped
    1/2 cup zucchini, finely chopped
    Salt to taste
    1 tsp chilli flakes
    1 tsp dried oregano
    1/2 tsp black pepper powder
    3 cups of marinara sauce (I used ​⁠‪@RaosSpecialtyFoods‬ )
    1 cup mozzarella cheese
    Fresh basil for garnish
    👉Method:
    Start of by boiling the lasagna noodles in hot water with salt & oil as per package instructions. While the pasta boils, lets prepare the zucchini. Thinly slice the zucchini, now drizzle some olive oil on a non stick pan over medium heat and place the sliced zucchini on top without overlapping and cook for about a minute on each side, just enough to get a slight char on them. Once done, remove from the pan and keep aside.
    For the spinach and ricotta filling - pour some olive oil to a pan, add onion and garlic and sauté on medium heat for 3-4 minutes until fragrant. Add the chopped zucchini and cook for another 4-5 minutes until the zucchini softens up.
    Add salt, chilli flakes, oregano and black pepper and saute for another 2-3 minutes.
    Now add the spinach, cover the pan and cook for just another 2-3 minutes until the spinach is tender. Allow the mix to cool down a bit, now add in the ricotta cheese and give it all a good mix until well combined.
    For layering - place a slice of zucchini on top of the lasagna noodle. Spread a layer of the spinach and ricotta filling on top making sure to evenly spread the filling, then roll the noodles tightly, keeping the seem side down. Repeat the same process for the remaining noodle sheets.
    Now pour the marinara sauce at the bottom of the baking dish and carefully arrange the prepared rolls on top. Top it off with some more marinara sauce and mozzarella cheese, cover with foil and bake on the centre rack for 40 minutes.
    Remove from the oven and set aside to cool for a couple of minutes, garnish with fresh basil leaves and serve immediately.
