All this time I thought evoo in the water w/ it was Italian. I love chunks of garlic! I love your recipes! Could you make some single or 2 dish items? I am a disabled Veteran and I live alone. So I don't cook a lot of food at one time. But I am unsure how to scale some recipes down for just 2-meals. This one is definitely easy, thanks for sharing!

Your kids are correct; you always boil water that is cold. Otherwise the warm/hot water from your faucet picks up dissolved minerals from your pipes affecting the taste of the food and can ultimately affect your health. It takes longer, but is the safer and more correct way of boiling water.
For folks that aren’t herbs d’provence fans (too much lavender taste soapy to me) I have found that using 1/2 and making up the difference with rosemary works great. I’m going to try this poured over some zucchini!

Just made this for comany this evening and it was absolutely delicious!! Every one loved it & even asked for the recipe. I made a lazy version of this when I was 12 and I was hungry and my mom was not home yet, I remember sauteing the tomatoes charring them a little bit with the onions and making them soft like that, smashing them down, adding garlic and basil, and adding spaghetti, it was delish and I have always felt proud because I thought I invented a recipe lol and it was the first one I nailed down. My dad and my mom cooked a lot during my childhood, still do, so watching them always made me want to cook myself, it's the reason I love it as an adult.

I used a dried Italian herb blend instead of the herbs d'provence. It was super yummy!
I know I'm not a anise fan either. I would use dried basil, oregano, or a combination of Italian spices I have, and a hint of cayenne pepper.
