THE RECIPES!
MARINATED SMOKED SALMON WITH CITRUS
Serves 4
INGREDIENTS:
12 oz Smoked Salmon
1 1/2 Ruby Red Grapefruit
1 Navel Orange
1 Lemon
1 Tablespoon Olive Oil
Freshly Cracked Pepper
1 Tablespoon Fresh Dill
1 Teaspoon Pink Peppercorns
METHOD:
Drape the smoked salmon, by slice, on a platter. Drizzle the salmon with Olive Oil. Squeeze half a grapefruit over the salmon, reserving the other whole grapefruit for the segments. Squeeze a small amount of lemon juice on top.
Segment the grapefruit and orange and place the segments on top of the salmon. Then add a few slices of lemon. Add freshly cracked pepper, dill, and pink peppercorns. Et voila! Refrigerate until ready to serve, up to 1 hour.
CHARENTAIS MELON + PROSCIUTTO
Serves 4
INGREDIENTS:
1-2 Charentais Melon (These are the smaller melons that originate from Charentes, France. In the States the closest would be a Tuscan Melon and I see those at Trader Joes all the time in the summer!)
4-8 Slices of thinly sliced Prosciutto
Freshly Cracked Pepper, Optional
METHOD:
Slice and de-seed the melons. Cut into slices, top with prosciutto. Serve with freshly cracked pepper if desired.
CHEESE TRAY + SALAD
Serves 4
*For a nice selection of cheese, I like to add a creamy brie, a salty blue cheese, and a harder cheese like a Tomme or an Emmental.
1 Head of Bibb or Boston Lettuce
1 Tsp Dijon Mustard
1/2 Tsp Red Wine Vinegar
6-8 Tablespoons Grapeseed Oil
1/2 Minced Shallot
METHOD:
Take the cheese out at least 30 min before serving to get to room temperature. Wash lettuce, wrap in a clean kitchen towel and place in the crisper.
Whisk up dressing in a salad bowl. Add mustard and vinegar first, then slowly drizzle oil, whisking all the while until a dressing forms. Season with salt and pepper, then add the minced shallot.
When ready to serve, toss the lettuce leaves with the dressing.
CREME FRAIS WITH SYRUPY STRAWBERRIES
Serves 4
INGREDIENTS:
3 Cups Creme Frais OR this substitution below
2 cup heavy whipping cream
1/2 cup Sour Cream or Creme Fraiche
3-4 Tablespoons powdered sugar. Start with 3, add more if needed after tasting
1 Vanilla Bean or 2 Tsp Vanilla Extract
3 cups fresh strawberries, hulled and sliced in half
2 Tablespoons granulated sugar
Fresh Mint Sprigs for garnish
Lady Fingers or another lightly sweetened cookie
METHOD:
Place strawberries in a bowl. Toss with the granulated sugar. Cover and refrigerate for at least an hour, overnight even better!
If using the substitution for Creme Frais, place the heavy cream in the bowl of an electric mixer, add sugar and vanilla bean paste, and whip on high until soft peaks form, then add the sour cream and whip quickly just until combined. Cover and refrigerate until ready to serve.
To serve spoon out into some footed glasses, top with strawberries and syrup, garnish with fresh mint and cookie. Хобби
I like how you showed us the France market before cooking lunch, it's really entertaining
So glad you liked it! Apologies for the audio, it was pretty noisy in there! Ha!
I thought the birds' singing is so nice. Something that you don't get to enjoy in the city. Pretty cute.
@@EntertainingWithBeth But you neglected to show us the amount everything costs........not everyone has a bottomless budget
Ah so glad I found your videos. I lived in France for three years and this is bringing back great memories. Really enjoy watching you go about on adventures in France 🥰
Seagulls add the perfect seaside sounds. Everything is lovely Beth, and you're so charming 💕👩🍳
You nailed it Beth!
I am French and grew up in a typical French family and this is everything my mom would do!!!! But you have to add we don’t do this everyday! It looks like a Sunday lunch to us. On week days we would just do main course.
Loved it!
Makes more sense. That was a lot and believe me I would dig in lol. amazing 🤩
I really enjoyed this video, Beth! Thanks for taking us to the farmer’s market with you and showing us how to prep a French lunch!
You are so welcome! So glad you enjoyed it! :)
Loved this lesson in French meal prep and I love a good farmer’s market anywhere! Oh how I wish to be able to stay at someone’s place who has such a vested interest in food as I do lol. This was such a joy to watch Beth. Thanks for sharing it with us.
Loved every bit of this video. Food get’s so much more exciting when you can see the culture behind it🥖
Merci de montrer the French way of life ! Bravo vous parlez bien français ! Bon séjour ..🥰 when you ll return to US can you please show to French people the US market too ?
I love European fresh markets! Miss them since moving back to the US. Your meal looked scrumptious!
It feels like I’m there with you in the kitchen 😀
Ha! Yes the iPhone shoots have that effect! Ha! 🤣
What a lovely video, Beth! Thank you for sharing!! Absolutely love getting to see France with you, while sitting in my chair here in the States 💕 You have such contagious energy and joy that just makes you so pleasant to watch ❤️

More on their way! This week we'll head to a traditional French Bakery! Get ready for some serious deliciousness! Ha! Stay tuned :)
We need to be good friends so you can teach me how to speak French. Wow! I love this video. Showing us the market & the food. Then coming home & showing us how to prepare it. Love the birds chirping in the background. I really like the t-shirt you bought @ the market also. Can't wait to see the next video. Safe travels Beth!
I'm so happy to see you shopping and showing us your life there! I can't wait until you spend Christmas in France! Lost of love Beth! (And you look so cute speaking French oh la lá!)
Hi Beth, I have only just discovered your channel and you have captured my heart. Your enthusiasm and energy is so captivating . Im now sending a lot of time watching your past videos. Thank you.
Please don't everrrrrr stop posting videos...your channel is my go to for anything to do with entertaining! Thank you so much for all the efforts you make.
This is exactly what my mother in-law does for food. I love Amora, every trip we return with mustard jars. The marinière reminded me of Brittany, where my boyfriend's family is from. They even have a famous brand: Armorlux. Watching your video makes me miss France.
omg this looks so great, i love being able to live vicariously through these videos until the next time i can go to france!
Beth, I throughly enjoyed this video. The food looks amazing, so fresh and beautiful. What an amazing Summer adventure you’re having with your family. I’m so honored to follow along.
This video was a sheer joy Beth!! Thank you!! I feel so inspired, relaxed, and full of light!
Beth..I was going to watch later with excitement but then when I saw you I just wanted to be transported right away.💙Loved hearing the useful french phrases at market. I DO THAT tour first at the supermarket too..for same reason.😍Will watch your kitchen part later💗so excited to join you!!.♡LA..
This is so charming! I definitely don’t go to the markets enough here in America!
Right? It's really a fun way to shop and eat especially in the summertime when everything is at its peak :)
Hi Beth! In Belgium, we eat melon wrapped in prosciutto or other kinds of dried ham for entree, it's really good !
I live in the Midwest in the USA and my mother often fixed melon and prosciutto as an entrée. She added a little vinaigrette. We are Irish but grew up in Italian neighborhood. Maybe the Italians borrowed it from the French or vice versa.
or, if you halve a melon, you can pour some Port wine in the middle and have some serrano on the side.
Oh I absolutely loved this!!! So excited for more France content!
Everything looked so good. I think being able to go to a market as you did would be so fun.
Another fabulous and inspiring video. I’m definitely going to be trying the desert out, and the smoked salmon with grapefruit, orange and lemon drizzle over it with a small dash of olive oil. That sounds incredible. Your mother-in-law‘s vinaigrette sounds delicious, so another dressing to try. Thank you so much for this video, it was great to go on the adventure to the market with you and then come back and prepare lunch. I hope you are having a fabulous weekend. Keep safe and well. X
Beth, Thank You for the lovely French market. While we may not have access to all of the products, your hints are always so helpful.😀
You are a very lucky lady, Beth! Thanks for sharing your house with us. Love that beautiful china from your friend’s grandmother, she would be happy that he found someone who really values it. Brilliant video and what a delicious lunch. Have a nice and sunny weekend in France!
Thanks for taking us to France and serving us Lunch. Loving this series, will be waiting to see where we go next.
Ok, now I'm really jealous. Definitely putting Saint Gilles Croix de Vie on my bucket list. Thanks so much for sharing your travels with us, I'm enjoying learning about the culture.
I really enjoyed this Beth. It was so interesting. Wish I could have seen the table all set out with your goodies. It all looked so good.
Thank you so much for this lovely video! It’s inspired me so much for the weekend lunches!
Oh Beth you killed me!!!! What a beautiful wonderful and inspiring video!!!! Bought back so much memories!!!! Haven't been able to go back to France for the last four years dying to go back and experienced once again the delicious and fresh food, the ambiance and the relax and more calm pace of the French culture. Please more videos like this, I can't have enough. Still drooling from that superb lunch!
Aww so glad you enjoyed it Maggie! Sorry the audio wasn't so great, along with the shaky iPhone footage but hopefully it added to the feeling of "being there!" LOL! :)
I just stumbled across your channel and obviously I'm late to the "Beth" party. I've been binge watching ever since. As a commercial foodstylist that works with food all the time I find your show very refreshing and also very engaging to the viewer. Well done! I especially enjoy seeing how other countries entertain so thanks for showing that side as well.
Aww thanks Kristina, that's so sweet of you to say :) I have great admiration for what you do too! I never realized how hard food styling is until I launched this channel ha! So glad you found me WELCOME to the community! :)
How do you become a food stylist
Greetings from Southern Ontario Canada!

Hello from Australia. I am really enjoying watching these videos from France, Beth! Already anticipating and looking forward to the next and the next! 😊
Love vanilla bean. I like to save the empty pods in a separate bowl of sugar, the vanilla perfumes the sugar over time and the “vanilla sugar” it’s nice on many things.
Thank you for this fabulous visit. I loved the easy and uncomplicated way you assembled the lunch BUT those serving dishes are divine! The salmon and tapenades looked like works of art on the beautiful serve ware! You brightened my morning from a wet, miserable winter's day in Cape Town (South Africa).
I am loving your channel. thank you so much for all the vicarious adventure and great ideas.
I am loving this series Beth! It's so nice to take a little tour with you, it really feels like I went on a vacation and you are hosting me in your house :D

Oh it is! And this is just a small sampling! So much more to see and buy!
This was a great and fun video to watch! You are just glowing Beth, with happiness, my father would put cracked pepper on his oranges, and sliced peaches in a glass of red wine while eating his dinner, my dad was born 1920, in Italy and came to Canada in 1956, my friends were so inspired by all the neat ways he would eat his fruit and vegetables
Ha! Oh yes my Dad, whose family also came from Italy (Sicily) would do some funny things with fruit too. One of my favorite memories was after dinner he would slice a peach and put the slices in his white wine?! Ha! So glad you are enjoying the videos! More on their way!
