THE RECIPES:
Here are some similar recipes to what I served in the video so that you can host your own Summer Dinner Party inspired by ours!
YELLOW GAZPACHO SOUP (For Red Gazpacho use Red Tomatoes)

ROASTED BEET SALAD:
Serves 8
INGREDIENTS:
8-10 roasted beets (to roast cover in aluminum foil and roast at 425F until tender, about 40-50 mins)
1Tbsp tsp Dijon Mustard
1 1/2 tsp balsamic vinegar
juice of 1 ruby red grapefruit
6-8 Tbsp Grapeseed oil
1 shallot, minced
1/4 cup fresh mint, chopped
Crumbled blue cheese (optional)
METHOD:
Remove skin from beets, and cut into small chunks. Keep refrigerated until ready to serve.
For the dressing, in a small bowl combine the mustard, vinegar, and grapefruit juice. Then slowly add the oil in a steady stream whisking all the while until combined.
Place the beets in a shallow serving bowl, drizzle dressing over beets, top with shallots and mint (crumbled blue cheese on top is also great!)
MARINATED SMOKED SALMON WITH CITRUS ( Featured In this video • French Market Tour + L... )
Serves 8 as a starter
INGREDIENTS:
24 oz Smoked Salmon
2 Ruby Red Grapefruit
2 Navel Orange
1 Lemon
1 Tablespoon Olive Oil
Freshly Cracked Pepper
2 Tablespoon Fresh Dill
2 Teaspoon Pink Peppercorns
METHOD:
Drape the smoked salmon, by the slice, on a platter or across 2 platters. Drizzle the salmon with Olive Oil. Squeeze half a grapefruit over the salmon, reserving the other whole grapefruit for the segments. Squeeze a small amount of lemon juice on top.
Segment the grapefruit and orange and place the segments on top of the salmon. Then add a few slices of lemon. Add freshly cracked pepper, dill, and pink peppercorns. Et voila! Refrigerate until ready to serve, up to 1 hour.
FOR THE GATEAU APERO
Serves 8
INGREDIENTS:
3 eggs
1/2 cup of milk
1/2 cup oil (Grapeseed, or Vegetable)
1 1/3 cup flour
1 tsp salt
2 tsp baking powder
1/3 goat cheese crumbled
2 Tbsp Fresh dill, minced
Other Mixins:
Green Olives/Ham
Chorizo
Sundried Tomato/Mozzarella/Basil
Zucchini/Emmental Cheese/Chive
Cheddar Cheese/Bacon
METHOD:
Preheat oven to 375F (185C). Grease a loaf pan with baking spray and set it aside. I used a pan that was 22cmL x 10cmH x 7cmD so roughly 8.5" x 4" , which is smaller than most 9"x5" standard American loaf pans. So your bread may not rise as high, or need as much time baking as mine if using this larger pan. It may be done in 20 mins as opposed to 25 mins.
Whisk together wet ingredients, set aside. Then whisk together dry ingredients. Add dry ingredients to wet and stir. Add in cheese and dill or other mix-ins. Bake for 25 mins.

DIJON TARRAGON POTATO SALAD:
It's basically this recipe below, but swap the herbs for fresh Tarragon, omit the bacon, and add caramelized shallots. (4 shallots, sliced and sauteed in olive oil, S/P to taste, and a splash of balsamic vinegar at the end)

Best trick ever is score the potato in half- like an equator line- boil potatoes and the skins peel off one half at a time! Saved my life! 🥔

Ditto most root veges, apples, pears, etc.

@@majoroldladyakamom6948 .....peeling otherwise edible skin is a European habit. Soaking most produce in baking soda water, a very diluted Dr. Bronners, or an acidic solution--vinegar or lemon, then scrubbing gently is what I do.

Beth, this is SO inspiring for someone who feels that every morsel needs to be made by me- it truly doesn’t, and now I can’t wait to have a reason to try your SMART approach to entertaining!
LOL! A girl after my own heart! Truly that's me too, UNTIL I get past 8-10 people, then the "Hybrid" approach kicks in ha! And France makes that SO easy! BUT so do other places in the world if you seek out artisan/homemade things found at farm stands, co-ops or Farmer's Markets. And really, no one will know the difference! Just be sure to hide the soup bottles before everyone arrives ha!

Aww thanks Michele :). The funny thing about entertaining is that the confidence just comes from doing it over and over again. I guess like anything in life! You just have to jump right in, knowing there will be mistakes, goofs and occasional epic fails (Oh I've had them too!) but that's when we learn the most! And where I get the best tips, from all my own the fails! :) And then it's always such fun to bring those experiences back to you all as tips :)
Ahh, these summer vlog video’s are really growing on me! It’s giving me so much inspiration to plan a vacation to Southern France some day when the pandemic is over and the ending of this one was just perfect 😂
If you don’t have any gloves for the beets, put oil on your hands before handling them. The fat makes it harder for the pigment to get stuck! And then when you wash your hands, scrub with salt and more oil. Helps loads!

I couldn't believe that everyone came back to your home the next day and ate it all again! I haven't heard of that in US ( unless it's family or friends staying at your house).I have just found ur channel and am enjoying your breezy style and the kind of foods and preparations that are popular and traditional in France.I lived in Paris with some college friends many moons ago.No supermarkets then.We shopped daily and the food stores ALL closed from noon-4pm or so and then re-opened so people good get things for dinner after work.We lived in Montmarte and we had a blast.We ate simply but fresh! We had many dinner parties and consumed much wine,bread,cheese, and charcuterie!

When I was in culinary school we were twinned with the college in noirmoutier! Les Sorbet. I stayed over there and worked in a hotel in Pouzages. It’s a beautiful part of France. Love your videos ❤️

@@EntertainingWithBeth Noirmoutier potatoes are delicious and popular here in Poitou Charentes. Did you know that Isle de Re also has great potatoes, quite a small commercial crop, I'm not sure if they make it across the border to The Vendee.

I absolutely love episodes like this, showing how you entertain friends, quick tips and short cuts. And the "real-life" realness we are getting. Just love, love, love it. We have a big family. Our dinners are never smaller than 8 to 10 people. I can get a little stressed something trying to balance cooking times, etc. I want to spend time with my family and guests too. Thanks so much for posting. We may not have the beautiful french bakeries or butcher here, but we can use these same ideas and make them work for us.
Absolutely! The tips are universal no matter where you live! And I find too, Farmer's Markets and Health Food Stores/Co-Ops are also great sources of high-quality pre-made foods :)
Love all your videos in France. My husband lived in Toulouse for a year long time ago so it has a special place in our heart. But I hope you’ve time to enjoy being there as well, between all the filming, cooking, editing, etc.

I loved this video! It makes me want to come to France (it's been awhile) :) It's amazing how different things are in the states, people rushing to eat and run. I like this slow style better.
I learned that early on at my job that involves event planning. I determine the menu options and quantity based on volume of men vs women.
Like if I do boxed lunch meals. I have to add more Italian deli and the Roastbeef sandwiches if there is more men and are under 60. The women of any age and much older men go for fish, vegetarian or poultry meals.
