We started to use a serrated knife but that was just taken too long. I grabbed my 12-in tin snips and made quick work of it. Also worked great to split the breast bone. Just wanted to throw that out there. 😊

I love spatchcock Turkey, I did one last week as a test trial Turkey and it came out great I would highly recommend doing a spachtcock Turkey and it take almost half the time to bake not to 3 to 4 hours to bake a whole Turkey.❤
I have never spatchcocked a turkey/chicken(either) but now I am going to do it, you make it look easy, well almost...LOL! My very favorite are the wings and the neck.....I often wish a turkey had more than two wings and def more necks!!!! Thanks for sharing amazing recipes and always showing how easy they are to make! I definitely would like to try this method for a roast chicken, for Turkey we do it the old-fashioned way, but I will still be making the herb butter which is so exciting especially now that I have a zester to put some lemon zest in there.

This year was our first time making a turkey & this was the best turkey we’ve had!! We did brine it in salt, garlic & peppercorns for 12 hours. I have 3 questions for you: 1- If I apply your brine recipe, and I make sure to wash and then pat dry the bird, will I still get a crispy skin? 2- Do you recommend having the turkey sit for some time in the fridge uncovered AFTER the brining process in order to get a crispier skin? 3- Do you think wet brine is better than dry brine in general, or it’s just a personal preference (Let’s assume the flavor part that comes from the flavoring ingredients you add is not a primary concern, but the main priority is to get the most tender and juiciest turkey breast, as dark meat will usually be moist, assuming all perfect cooking conditions are applied)? I've cooked turkey this way , it works, I put the spine and other parts in a pot with vegetables and water to cover, it cooked when the turkey was cooking you can never have enough broth
