I make essentially this recipe but a bit differently! I use day off crusty bread like you, and I rip it but I don’t put them in the oven! They dry out naturally enough while everything is cooking for me! I add the hardier herbs to the cooking onions and celery so it helps absorb the flavour, I also add the chicken stock to the pan once everything is cooked so that every piece of stuffing is equally flavoured! Add the fresh parsley at this point, I then pour it over the bread and mix, it’s definitely “mushier” except it crisps really nicely! So after 30 mins covered and 15 uncovered, it’s crunchy/crispy on the top and bottom and a little softer in the middle. And really really flavourful! Sometimes I’ll also use some brown bread and rye bread for additional different flavours/texture.

I normally don’t cook a turkey and rarely have I ever made dressing. I was doing the full turkey dinner for two and decided to make dressing. A friend gave me a recipe and a search came up with this video - the exact same recipe. Carla’s description of the objective in how to get the bread correctly moistened was critical in the success of my dressing. I had a bit more bread and I made some poultry seasoning and added 2 tsp of that to the onions before they were mixed with the bread. I would do it all again, it was wonderful. Thank you.
