I have made a similar version of this stew, to make a more traditional stew type broth (gravy) when it's done cooking I take a cup or so of the stew, blend it and return to pan and stir. Yum!!

I'm making this tonight. I'm going to add green beans and instead of potatoes I'll serve it over mashed potatoes. Any excuse for mashed works for me! I also learned from another RUclipsr that sautéing the tomato paste with the onions & garlic really ups the umami effects.

I made a similar stew from a slow cooker cookbook and made seitan for the first time. I know we would love it without seitan too. I just wish we had more leftover for another meal. We gave one container to my father-in-law, age 87, and I ate the rest for for lunch. Next time I'll follow your instructions. I like the addition of tomato paste for richness. Yum!
