Theon 100% had the best ending. He died for the Starks and got that recognition he always wanted. And as you said, Cersei and Jaime's ending probably could have made sense - born together, died together - with the right execution.
One thing that annoyed me about Brienne's ending was that she was pledged to Sansa - who became Queen of the North and presumably would've had her own Queensguard. She could've been the Lord Commander of the Queensguard in the North but she ended up serving Bran. I don't even remember them having a scene together.
That is not how it's work. Independance doesn't mean you have to have a kings guard. That was most likely Valyrian culture as it was implemented by Aegon.
I think Bran becoming King makes a lot of sense. He can see everything that has happened, he can varg into creatures and can see everything that is happening right now. He has no emotions that would impact his judgement, he could rule fair and just. They could have brought up all of these arguments to make him king and it would have been alright. Not great, but alright. Also my Nr. Worst ending (even worse than Nightking) has to go to Rhaegal. We saw this Dragon Grow up and it was literally killed for shock value.
Jon not ruling doesn't prevent chaos. Bran is an absolute sociopath with no empathy or social skills. Yet he is king. The possibility of the entire Iron Throne not crumbling to bits from war within a few weeks is basically none.
Disagree with Theon. While it may be thematically fitting the execution of that scene is just awful. You have that emotional acting from Theon just to have Bran basically say „Yeah, whatever. Now could you please go and die already, you’re wasting my time.“ Then he dies in like 5 seconds which is just disrespectful. I mean his death which could have been an emotional scene gets played for laughs which is insulting.
