    BOK CHOY AND GINGER STIR FRY RECIPE
    1 tbsp. coconut oil
    2 cloves garlic, chopped
    1 tsp. grated ginger
    1 tbsp. low sodium soy sauce
    1 lb. bok choy
    toasted sesame seeds
    salt and pepper to taste
    Wash the bok choy user cold water and chop it up, separating the stems from the leaves.
    Heat olive oil in a large non stick sauce pan and toss in the garlic and ginger. Cook for just a about a minute or until fragrant. Add bok choy stems, soy sauce and a splash of water and cook for 5 minutes.
    Once the stems are becoming tender, toss in the bok choy leaves and cook until they have wilted down.
    Season with salt and pepper and finish with a sprinkle of toasted sesame seeds. Enjoy!

    CRUNCHY BOK CHOY SALAD RECIPE
    3 baby bok choy, halved and thinly sliced (5 cups)
    3 scallions, thinly sliced
    1/4 cup sliced almonds
    1/4 cup sunflower seeds
    1 tbsp. extra virgin olive oil
    1 tbsp. toasted sesame oil
    1 tbsp. honey
    1 tbsp. low sodium soy sauce
    1 tbsp. red wine vinegar
    Combine bok choy, scallions, almonds, and sunflower seeds in a large bowl. Set aside.
    In a small bowl combine extra virgin olive oil, sesame oil, honey, soy sauce and red wine vinegar. Whisk together.
    Drizzle the dressing over the salad, toss and enjoy!
    Serves 2-4 Calories: 369; Total Fat: 30.9g; Saturated Fat: 3.5g; Cholesterol: 0mg; Carbohydrate: 20.6g; Dietary Fiber: 6.1g; Sugars: 12.1g; Protein: 10.6g
    15 MINUTE BOK CHOY SOUP RECIPE
    1 tbsp extra virgin olive oil
    1 lb. baby bok choy (about 3 bulbs)
    4 cloves garlic, thinly sliced
    1/2 tsp. dried turmeric
    3 cups cold water
    squish of fresh lemon juice
    salt and pepper to taste
    Separate the bok choy leaves from the stems and slice.
    Heat oil in a medium pot over a medium-high heat. Once the oil is hot, add in the garlic and turmeric, stir and cook for just a couple of minutes or until the garlic is fragrant.
    Add in the bok choy stems and season with salt and pepper. Once the stems begin to soften, stir in the leaves and the water. Turn up the heat and bring everything to a boil.
    Once boiling, the soup is done. Shut off the heat and finish the soup with a big squish of fresh lemon juice. Serve and enjoy.

    Slice some garlics, cut some mushrooms, get dried chilli peppers, salt and a bit of soy sauce. Turn on high heat and keep stove on high heat the entire time. Warm pan till hot, add oil, add garlics and chilli peppers, when you can smell the fragrance, add in your mushrooms first, stir until almost cooked, add in book choy, add salt and soy sauce to your taste. Stir. Don't wait too long, turn off the heat while the bok choy is still crunchy. There you have a full dish of delicious veggies, all you need is some rice to pair with.

    Dani I just love your matter of fact approach to cooking. You’re a lovely lady both inside and out. I came here looking to see what to do with the bok choy I bought on sale and as usual you were a big help:) I have never worked with it before but have always enjoyed its mild goodness whenever having Asian cuisine. I have a very picky palate when it comes to veggies and so this is a real winner for me.
    I’m going to make the salad tonight. I bought the mature bok choy so hoping it will be good. My husband loves cashews, so I’m goin to put some chopped cashews in our salad. Going to pair it with some grilled chicken thighs for dinner. Yum!! 😋

    Oh, Em, to the Gee... i've been dancing in the pan with bok choy!these recipes are great starting points to tinker with as many others have done. 15-minute soup is a useful trick

    I tried this today. It was absolutely delicious!
    I am not a big veggie person, but this was so fast and easy to make. Lots of flavor. I personally added chicken broth instead of water. Added salt and pepper in my own bowl

      Virtually all fruits and vegetables are perfectly safe and delicious when eaten raw. Though kidney beans must be cooked at a high temperature for at least 10 minutes because they contain a toxin (phytohemagglutinin), which is why they should be boiled first if you want to cook them in a slow-cooker because they don't get hot enough to destroy the toxin.

    I always try to grow something different every year in my garden. One of the items I grew was baby bok choy. Lots of it! Will probably try the stir fry, but will add chicken. Some will go in the freezer for the soup. I hate to waste food so your recipes will get me started. Thank you!

    I will go with Soup first as it's winter here in Canada and I definitely need some quick soup recipe which I got here..Thank you for sharing it..I was really wondering how to use this veggie when I saw it in the vege section, but now I know..:)..Moreover, you videos are to the point and gives all required info under 10 mins..Love that..saves a lot of time as I hardly get time to watch big videos..Looking forward to learn more from you..

    my first time trying this vegetable. decided to make the soup first since i haven’t had soup in over 6mths, was easy to make and delicious AFTER more spices were added, without more, the liquid was too bland tasting. i added more salt & pepper. then added 1/2 tsp of goya sazon and when that didn’t help enough either, i added 1/2 tsp of grey poupon and that did the trick.. Got 2 - 10ish ounce servings out of this (using 12oz of bok choy) and at 3 netcarbs max each, this makes for a great Keto friendly soup and the turmeric in it is excellent for those of us on Keto for inflammation reasons. thanks for recipe, now i know i will always have a tasty keto friendly soup available if i get sick :)
