I would just eat the little chips that it makes, I would bet they are even better than potato chips. As long as they aren't burnt I'm sure they would be just fine to eat and be tasty for that matter. Besides if it wasn't for the cheese they probably wouldn't have lost any filling.

There is Bob Evans (we get our local supermarket brand) mashed potatoes that are really good as a side dish. You nuke em for 6 mins total and they're a great side dish. When they're done we put some salt, pepper, butter, and sour cream in them (and usually some corn too, since it's my family's favorite).
Classic mashed potatoes but add garlic powder, onion powder, curry powder green onions and bacon, mix all that. Wrap it up in egg roll shells and deep fry for a few minutes. They're called Celtic Rolls and they are the definition of godly.
Pro Tip if you have more than a couple of avocados: cut and de-pit as before, take a cross pattern baking cooling rack and put it over top of bowl, place avocado halves face down and press through "spokes," drag peel across enough to clean peel.

Better way to make the potatoes is to mix in milk and butter. Do one cup water, one cup milk and bring to a simmer. Then add in the potato mix and one table spoonish of butter. Makes then just a little bit better.

I scoop with ice cream scoop onto a plate or right into frying pan of heated either peanut oil or olive oil, I pat down with ice cream scoop, brown turning once. Make your homemade dipping sauce, or just use sour cream.♥️♥️🙏🙏🇺🇸🇺🇸
Can also add some diced up green onion and chopped up bacon to that potato mash. Dipping: molcajete spicy sauce, salsa aguacate, garlic/chipotle alioli...it's endless!

I used to work at a brick oven pizza and cheesesteak shop and the Mexicans that worked there always made their own food. There was often tostada like shells made with masa, extremely hot salsa made with piquin and arbol chiles and these. Fresh cut fries were on the menu, so they would often mash some potatoes up, wrap them up in a stack of store bought corn tortillas and fry them in the fryer. I can appreciate why meat wasn’t a common part of their cooking but one day I suggested they add some bacon from the line and they never went back to not adding it. That’s also where I got addicted to eating my Lays potato chips with cholula.
Hey Sam how about inverting these and making the tortilla out of the mashed potatoes (like a potato pancake but thinner and rolled?) Then add shredded pork / beef and cheese on the inside? And maybe fry in beef tallow to get away from the seed oils.

Add some salsa of your choice and some taco meat or seasoned beef to the mashed potatoes along with the other ingredients you added. I've made something similar to stuff potato shells with. I've also done it with a pizza or pie crust. Makes a great dish no matter which way you go with your kicked up potatoes.
I use the loaded potato mix to make crispy potato cakes to serve as the toast for my avocado toast. Add some pickled red onion, everything but the bagel seasoning and balsamic glaze.....LORT HAVE MERCY!

Made this tonight using a larger burrito wrap and the air fryer. Sprayed down with cooking spray and they turned out incredible!

Instant taters, I use 1/2 of what it calls for water and the other half whole milk with 2 tablespoons of butter..
Also pizza may have potato flour in the dough. Thanks to such a change in the recipe, it is more filling and if you can, the taste can be better.
