    I took your suggestion the other day of using a higher than 20% fat ground beef and literally brought back memories of my favorite childhood taco place. Can’t put a price on that… but it was technically cheaper than leaner beef.

      Beef fat is cheaper than beef meat. It's harder and more expensive to develop muscle in cattle than just overfeeding them corn slop or whatever they eat

      nothing wrong with the higher fat content. i prefer it in almost any circumstance. youre just going to end up adding some oil if you use too lean of a beef.

      @@Noway-sg8md just to play devil's advocate for a moment- this is true if you're sourcing beef hormone and antibiotic free, but that crap is stored in the animal's fat. It's better in that case to go as lean as possible and sub the fat for a healthy oil like olive or avocado.

    As a Mexican-American, I was raised making Quesadillas with corn tortillas. I didn't have a Quesadilla made with flour tortilla until I had one at a fast food restaurant. I like them both but prefer mine at home with corn tortillas.

      That's how I've always eaten quesadilla, too. I was eating tacos and tostadas long before there ever was the first Taco Tico restaurants. All thanks to a wonderful Italian/Dutch family who spent their summer vacations in the Southwest.

    You can also use any veggie as a filling with cheese. Great way to use left overs. Do not forget the green chilies.

      I recommend gorgonzola, cheddar, swiss, or mozzarella cheese. They just melt so amazingly with the tortilla

    I really enjoy a veggie sort of option with these as well - lotta mushrooms instead of the beef, basically.     I'm weird. I like cooking my ground beef with a whisk. It' does an amazing job of breaking it down into little bits, and it works for almost anything I cook other than hamburgers. Though, seriously, I have to make homemade tortillas already. My kitchen space is almost non existent, but I have to have those. Just missing out on too much.

    Can you do Icecream? Preferably an easy recipe that does not need a machine?

      Easy recipe and all you need are 3 things:
      1 Tbsp shredded and then diced Ice
      2 Tbsp Whipped Cream
      Mix in bowl and Freeze until it reaches the desired texture!

      There is a great way of churning ice cream without a machine, but do know that it is physically difficult. Find your ice cream recipe, follow the directions, but once you get to the point of using a machine, you can get a bowl of ice, and hand churn it using a wooden spoon or something similar. It would be much easier to search up a real way online, but this is the start.

    As a proper student i go to the kitchen everyday at 2am and i make a pair of the good ol' cheap quesadilla. Personally is the best night snack, cheap, easy, quick and not that dirty. I think on sundays im gonna prepare myself the components from this video for a week so if i want a quesadilla ill just put it all together. Ty man for the recipe.

      Yes, things like meat and dairy products tend to be way more expensive, and then there's stuff like whole bottles you only need tablespoons out of multiple times a year at best. Buying small bottles and packages of ingredients easily more than doubles the price overall.

    Living within ~2-3 mins of a Taqueria that will sell their fresh made tortillas, I just pick up a stack of those lol. Definitely better than something I would make at home. And I don't understand why more people don't buy blocked cheese and just shred a lot, store it in a plastic container or something for later use if you know you're going to be lazy? Granted, in college I always bought pre-shredded. But I've noticed as I have gotten older that it doesn't melt the same. And to me, quesadillas are like traditional nachos. Can just have it with cheese and jalapenos and call it a day. Hell, when drunk, that's all I do lol.
    These But Cheaper eps and the faster than ordering from a restaurant ones are my favs of yours.

    The only thing I would have preferred is just a homemade tortilla with hand shredded cheese vs the store made ingredients one. You added a ton of extras to the gourmet one, which is great, but can't compare it to the other.

      he should have just compared storebought tortilla vs handmade
      shredding cheese and frying up some beef is easy compared to making a tortilla from scratch, how much of a difference does it make, and are you really sacrificing that much by getting a half-decent storebought tortilla (not the crappiest one like he got for the video)

      He wasn’t exactly comparing them, hence why he said “it’s not a but better.” He was creating a baseline that many people know and loved growing up, and then showing that with a little bit of extra effort it can be elevated.

    I prefer tortillas made with lard, but I've found some store bought flour tortillas have just about enough vegetable oil in the outside that they make decent quesadillas without the need to add an oil to the pan when you cook them. There's a few brands that are extremely oily though, those suck.
    I like to get some Spanish chorizo sausage (not crumbly, it's dry), cut it up, fry it to cook it, then add that to the quesadilla. The chorizo oil is also pretty tasty and can be used instead of butter.

    Love quesadillas of all kinds. A friend of mine figured out how to patiently make them over a campfire and then had to make several for everyone. Also have had chavindecas at a restaurant which is pretty much what you made except with 2 tortillas like a sandwich…. Good stuff!

    The tortilla recipie is the all star. Quesadilla was ok (actually it tasted better after being in the fridge for a day and microwaved) but tortillas are expensive and I'm gonna use this recipie a lot for everything from wraps to breakfast burritos.

    As a mexican living in Mexico I've always supported your Mexican recipes, however this time I'm afraid that's not what we'd call quesadilla, actually that's a sincronizada, still a great approach tho

      @@ross-carlson sincronizada is a flour tortilla based quesadilla. It contains meat vegetables and of course cheese. The traditional "regular" quesadilla contains cheese, spices, and maybe some type of protein. The traditional quesadillas are made out of corn tortilla... the reality is that is almost the same, but the difference is flour tortilla and the added vegetables in the sincronizada.

    When my husband and I first moved in together, he had to do a lot of convincing for me to buy blocks of cheese instead of preshredded. Now I distinctly taste the grittiness of bag cheese because I've been shredding my own for so long.

    I feel like if you put the same stuff in the store bought tortilla with pre shredded cheese, it would be pretty similar and less hassle of having to make your own tortillas and shred your own cheese.
    But yes, homemade looks absolutely amazing

    I get it's cheap..ish (meat is NOT cheap where I live) and i'm definitely going to use your version for supper because it obviously tastes better but for an actually cheap and fast lunch? The first one wins hands down! No need to spend a ton of effort and time on making the tortillas, you don't have to get dishes dirty by grating cheese, cooking meat and chopping veg and you can do it all as fast as grilled cheese....it's just a far reach to compare and say "these are pretty much the same price and effort" when it ain't true. Great recipe though!

    I do a Chipotle Sour Cream.
    -Take a few peppers from a can of chipotles in adobo sauce, finely chopped or food processor.
    -Zest of a lime and enough juice for desired consistency.
    -Chili powder (mainly for color)
    -chopped cilantro
    -salt to taste
    I always have a few peppers left over from when I make Mexican and this is a great way to use them up and turn your sour cream into something interesting.

      Press with parchment paper and slap it down on the pan/griddle.

    I think the best quesadilla
    Is one where you marinate the meat using ground adobe seasonings with lime, cumin, Cheyenne(very little), natural oil, and msg of course.
    Grilling the chicken breast and sauté the onion/peppers with salt/pepper lime or lemon juice and oil.
    Using the freshest Colby Jack you can fine and other Melty cheeses.
    Put your butter on the inside of the tortilla(this negates the need for an sauce. If your quesadilla needs sauce it is probably masking the lackluster meat. Spread the room temp butter on the inside and put a layer of cheese, meat(cooked obviously)/veggies/cheese. Fold it over and oil the area you are going to brown in. When the butter and the cheese melt together. It’s formed the sauce with the juices from the meat. You can eat it with some sour cream or pico de gallo/salsa whatever. I have probably made 500 of these things since I came up with the recipe. I do not recommend using the oven but if you are strapped for time and cannot do one at a time. You can use the oven to cook multiple. You seriously don’t even have to have the veggies in there if it taste good for the chicken and meat

    A really good tortilla compromise, there are uncooked premade flour tortillas, in the refrigerator isles of most groceries, (pretty hidden at times), very affordable, and they come out as if from a restaurant just need a pan and 3 minutes.
