      I would only recommend NOT buying those tortillas, they're bland and tasteless. Pass by your local latinx market and got some more homemade tortillas.

      Saul's recipe is amazing, with exotic ingredients from Mexican culture and all the science behind it seems to be the healthiest. But it is very light in this combination of fresh cheese and tomatoes...
      "Ao pastore" is one of the combinations with the most intense flavor (lamb meat is incredible) and Alessandro's recipe by far must be the best one....

      And made an actual mexican dish too (usually only Saul make them), we call that a "gringa", because it is made with flour tortilla instead of corn, and it is really good.

      Alejandro made his take on a quesadilla/taco we have here in Mexico, that is called "gringa", (that literally means, someone from the U.S., culloquially) because it is made white flour tortilla, since we use mainly corn tortillas... but is still a mexican dish... Saul made a traditional quesadilla, he combined the ingredients in a high class way, but still traditional... we do not combine them.... pumpkin flower is very traditional for a quesadilla and is so so so delicious, try it, come to mexico, I'll invite you some.

      As Mexican, I can say that is worst pastor meat in the world haha. Cilantro is like basil, you don't boil it for 4 hours it will quickly lose it's flavor. Plus pastor is made like kebab meat, it's not supposed to be cooked like that at all. He made a lot of rookie mistakes IMO.

    Alejandro is so chill while still being informative with his cooking and ingredients, I feel like John's version is me on a weeknight, Alejandro's version is mine on a relaxing weekend, and Saul's would be the type I would pay to try at a restaurant at least once.

    John is the most relatable one ! 😂 He is like "I can buy everything in supermarket except Time. So, imma save my time from not making queso fresco & grinding salsa" I think it's my first time seeing Alejandro. He was so calm & lovely 🥰. And here comes our Mexican Masterchef Mr. Saul ! 🤣 Comedians should be thankful cuz Saul became a Chef or else they would have been jobless right now. Uncle jalapeño, Cousin of tomato, vegetable family 😂.. And our Queen, Rosemary 👑 I would love to have her as my teacher 😍. Lots of love to cast & crew ❤️

      queso fresco is sooooo easy to make and it's always so good. I'm vegan now and I have other ferments but they're not as fast an easy to make as queso fresco. I hope you enjoy your cooking

      Well that’s the most authentic of what a quesadilla is (Alejandro’s is also called sincronizada because it has meat). I never thought of quesadillas being vegetarian but I guess they are

    Honestly level 1 started off a bit iffy with all the ready made ingredients but the end result was quite nice looking for the amount of time put into it. I also liked level 2 because somehow, I felt that it was made with love. And level 3, no contest, is pure food art.

      What time did level 1 put into it lol? Heat pan, put tortilla in pan, add cheese and chicken, pour sauces into bowls. It's gonna look like that no matter who makes it.

    Chef Saul uses traditional ingredients, but makes them fancy. No truffle oil, no duck, just the ingredients he grew up with. Saul is the best!

      Im pretty sure even the level 1 chefs are quite skilled chefs and could easily go for level 2 anytime, but have to play the level 1 part and buy everything premade.

    Dang! I looked up Cantina Rooftop's menu, but I don't see Chef Saul's quesadilla on there! :( It looks so fresh and delicious! Also charmed beyond belief how he spoke about the salsa ingredients as a family - _the cousin, the niece, the nephew, the Uncle Jalapeño..._ XD

      I think if someone would ask him about the flor de calabaza quesadilla, he'd make it. He said in another video someone wanted to try the torta he made I think that's what he made, but he cooked it for them.

    I loved each of these chefs so much, Saul is a special human being and his warmth and humor shone through. Loved how detailed he was in explaining his process! I also really enjoyed them sharing their culture with us

    Chef Saul's humor makes me feel comfortable with food in a way that slowly edges me closer to Level 2 than the Level 1 I was before I started watching these videos.

      @@theoutsiderspost4982 it is literally a dish that existed even before the conquerors arrived here, originally it was just some folded tortilla filled with something similar to what Saul did here, Spain then brought the cheese and the quesadilla became what we now know. So no, it isn't a tex-mex food just like burritos aren't tex-mex food too, it's just that everyone is used to America's distortions of those dishes and others that some believe that lie

      @@asophiez5265 No, in the north flour tortillas are more common than corn, therefore more people make quesadillas with flour tortillas than corn. From what i've seen (because thankfully i have never tried them) tex mex quesadillas are different in the sense that americans make them almost like pizzas and use some horrific cheeses for them, but both flour and corn quesadillas are 100% mexican

    I love the simplicity and time crunch of John's dish, I love the flavors incorporated in Alejandro's dish, and the complexity of Saul's dish along with the homemade cheese and flour tortillas. Also love that Saul's dish was vegetarian.

    "This is why you pay 25 dollars for a quesadilla at a restaurant" keeps me from leaving México
    And that price makes sense bc I don't think those ingredients are easy to find in the US, but in a normal Mexican market you would pay about 1.75 dollars for a quesadilla like that, maybe 2 dollars. I admire Saul for making real Mexican food in these videos
