  • Bloomin' BBQ Bologna Burnt Ends are on the Superbowl Menu at the Lambert House. This is a very consistent way to produce quality burnt ends for a meat, cheese, pickle tray. We used Meat Mitch Whomp rub and Texas Chrome Sweet Heat for a real flavor bomb.

    When I was a kid, back in the 1950's, my Dad use to barbecue thickly sliced bologna and baste it with Welch's grape jelly while it cooked. He served it on a hamburger bun. We'd dress it up with a big slice of beef steak tomato, and some iceberg lettuce. It was delicious!

    We’ve been smoking bologna for awhile now too. Gotta say that presentation looks amazing, we’ll done. One my buddies cuts them into lollipop shapes, scores them and skewers them. Pretty cool too. Great content thanks for sharing

    This method also works great using Spam. Cut part way thru, season, smoke. I do about 5 cans at a time. Some for appetizers and some in place of breakfast sausage.

    To help with depth consistency of your cuts lay the handles of a couple wooden spoons on opposite sides of your bologna and any worries about cutting through will be eliminated. Great idea that I’ll be making use of for this weekends New Years get together.

    This looks really delicious, I'm afraid I couldn't get my hands on half of the items required for this recipe but I suppose we could always try with similar items. This is definitely something I will try!

    That's pretty dang awesome Mark! I like the trick with the block to bloom it out...I was a wondering how that was gonna be done with a center cut of the chub. I'm gonna have to do this soon!!!

    This looks amazing, much cheaper/ faster/easier than the pork belly ends I was gonna serve for an appetizer. Can't wait to try this!

      I'd do both and you can pork belly pretty cheap from a butch 4-6 dollars a lb usually.

    I regularly smoke rolls of bologna for my neighbors. I use apple, hickory as well as mesquite wood.

      I have found some rubs are way too salty for bologna so go light with the rub.

    I had half a kilo of really cheap sausage left, instead of frying it with eggs like I usually do with this type of sausage I tried this recipe, that was amazing

    Looks delicious. The only concern that i have is this. Did the crisp ends get salt concentrated? I love baloney and i actually eat some almost everyday. Some brands get too salty for me though.

    If you deep fry the meat for 30 seconds it'll bloom better and form a meat crust that when paired with a good caramelized sauce can only be described as heaven from those strong enough to utter anything while warding off the good meat sweats.

    Just as long as it's not that chicken-bologna ,a friend does the whole chub cut in half ,about 6 hrs over oak wood or mesquite , bq sauce on side .

    Looks like Super Bowlogna lol. Looks delicious. Just a tip, you lose a lot of heat when you leave smoker door open. Keep door open for shortest amount of time. Great video.

    I might be wrong but I think you’ll find ‘blooming’ is a play on words started by Outback steak house. Blooming is not only a thing flowers do , or deep fried onions, or algae in warm weather but it’s also a mild Australian cuss, Australia being where you would find the geographical area know as the outback.
