Can I make a suggestion Jeff? More flavor and success in this dish would have been accomplished by pre searing the pork on all sides of those slices giving additional flavor to the pork and giving the pork a head start over the pineapple and bacon. Lower temperature in the smoker for a slower and longer cook and also once you get the bacon to a perfect color you could then pull the pineapple and wrap the whole thing in parchment paper and foil on top of that. To decrease swelling, poke holes into the whole thing keeping the juices to wind up in the foil wrap which you can then simmer and reduce to a nice glaze afterwards.
Spot On X, Nice suggestions - I was thinking along these lines myself when I saw that disaster at the end - Another thing I would add is to spray some of the Pineapple juice (very light misting) to the top of the pineapple, then "Wrap" the Top of the Pineapple with a Terry Cloth to keep it from over-cooking. Then follow the rest of your guidelines till perfection. ALSO - during the smoking I would Spritz (Not Baste) the Swineapple about once 45-min to hour to keep that Bacon from crisping up like that - Maintain a moisture blanket without disturbing the weave - Not sure if I would go lower than 225 on the heat, but definitely wrap after about 2-3 hours (Visual on the Bacon), not going to get any more smoke flavor after that anyway. Maybe, you tell me, the same 3-2-1 Method you would do for Ribs - 3-(Hours) Smoke, 2-Wrapped, 1-Glazing. Can't wait to take all this knowledge to the Smoker - My Wife LOVES Pineapple so this will be a great surprise. Oh yeah, before I forget, I think I would put a little brown sugar, Margarine, and a tiny amount of honey in the bottom of the Pineapple before putting in the meat - Not much, maybe a total of 2 Tablespoon all combined, (Maybe not, it's all about experimentation) - That with my Home-made Rub - Mouth is watering already.

Another way to do this would be to cook it wrapped through the beginning and then obtain your bark towards the end so that you don’t soften up the bacon too much. Reversing the process in this case which is something we do in the kitchen with roasts quite often.
Yes and to ensure the porks cooked all the way but definitely would be a better way to do it to sear it why not take the extra step it already takes 4 hrs lol

Gotta give this a try. Thinking I might make a cocktail in the hollowed out pineapple using a dark rum mix then using that pineapple for the swineapple, allowing some rum to soak in then add that flavor to the pork

I just tried this yesterday and I have to say, holy swineapple! I did 2 things different: I cut the top and bottom of the pineapple to make it easier to hollow out, and I was drinking bud light instead of shock top! :) Was awesome and a huge success!
I often will rub my pork roast with brown sugar and pineapple, those go together great. Stick that on the grill and you be able to smell it from down the street, smells awesome.
There is a tool made specifically for removing the inside of pineapples. It’s less than $3, and makes it super easy. You basically cut the top off and screw it in, then as it reaches the bottom, just extract. The pineapple is cored and comes out like a slinky.

If you don't have a smoker, use your oven, and add a little liquid smoke when you season your meat. Or, you could stuff it with any kind of smoked sausage or chorizo

My suggestion for smoking pork would be Applewood. I really like using Guavawood, but I have never seen it available locally. I have my own Guava bushes that die back to the ground in the winter some years, so I use the wood from those bushes to cook pork or chicken. Of course, I could use it on Beef, but I use more readily available wood like Mesquite, Hickory, Oak, or Pecan for that.
DON'T DO THIS!! I tried this recipe years ago when the idea first hit the scene. The enzymes in the pineapple turn the pork into mush. It has an awful mushy 'mouth feel'. After one bite, the whole thing went into the trash.
What you are saying is true, however if you cook it immediately it comes out right. You cannot let it set out or in the refrigerator too long cook it immediately.
I would have left the fat on and scored the meat like a pineapple and rubbed all those amazing seasonings into the meat and all over it. but thats the wonderful thing about recipes, you can find great ideas and make them your own!

Think I'll cook the pineapple a bit first, then cook the pineapple and pork a while, then add bacon so bacon doesn't get overcooked.

I made this for the first time. used country style. the meat came out with a strange texture. I wasn't able to eat it. it had a soggy layer.
