Question: I was watching other videos and for burnt ends, they put the chunks (with rub only) on a pizza mesh rack me smokes that way first, got a bark and crust, then put into tin and added ingredients. Was wondering if you tried this to see if it is better or your way?
Both ways work great. I usually just prefer to do mine in a pan because I can get more in the pan. I like to use some sort of binder to help the rub stick.

I did that with a couple canned chicken bolognas from the dollar store. Next time I'll cut up a case of them.
