    I worked with a guy back early in my firefighter career, that when we worked together would go to the local meat counter at the market and have them cut us bologna slices as thick as they could somewhere from 3/8 to 1/2 inch then take them back season them and put them on the grill. Once done add some sliced pepper jack cheese bbq sauce then make the bologna burger. Lettuce tomato onion and chow down. Thanks for the video brought back great memories.

      The guy who hired me 17 years ago was already doing fine but now he's in the corporate part of our parent company. Still swears by a bologna sandwich. One time said "I'm going to get my wife to cook me a bologna steak, cut extra thick, because itbwas a good month."

      Gonna try and find a whole bologna and give that a go, looks awesome. We had an old grocery that always had bologna in huge logs, like 10 lb size, my mother would have the owner slice up a pound and the old guy would always cut an extra slice off for me to eat in the store. The store is long gone and I rarely buy bologna as it is hard to find a decent one out here in Washington state but you have stoked fond memories and I'm now on a mission! Thanks again.

    Pro Tip: Run your boning knife through a bed of yellow mustard (blade edge) and slice...this way you can easily see your cut marks as you go if your're OCD as hell like myself lol

    I smoked two chubs and they were delicious. I had some leftovers so using my Alabama roots, made what I am calling Poor Man’s Stew. I cubed up the balogna and used it in a black-eyed pea soup with collards. I used onions, garlic, lentil, carrots, celery, smoked paprika, red pepper flakes, chicken broth and ham broth, fire roasted tomatoes and collards. It was more of a stew than a soup. Even my New York husband loved it. The seasoning on the bologna added some flavor and of course I used Holy Cow instead of salt and pepper. It was great with cornbread!

    Hell yeah! I’m a Nashville kid and grew up on fried bologna sandwiches! This is something I’ve put off for far too long! Thanks for the reminder of what we grew up eating! Great video!

    I have four or five of those cast iron skillets. Just like that are my late moms. She used to do bologna just like that fry it up cut the ends so it wouldn't make a mess. That's some good eating right there

    Mom used to make bologna sadwitch fried like a schnitzel, dipped in egg, flour and bread crumbs. One of the best childhood meals I still remember 50 some years ago. Love it.

    I grew up on Lebanon Bologna, being from Pennsylvania. My friends from Maryland call it sour balogna. Haha.
    White bread, American cheese, Lebanon balogna, Mayo (Dukes now) and lettuce. Ohhhh supreme.

      @rocketman5x Fried sweet Lebanon bologna sandwich with sweet and spicy pickles! Cut three slits in it like pork roll to keep it from getting a bubble in the middle when fried!

    I am fortunate enough to have a part time job in my retirement working a family owned pizza place. My cast iron pan was pretty sad. I took my DA and sanded it down and took it there an let it season for 3 hours at 500 degrees. The surface is like glass!

    I've always done my fried bologna sandwiches with just yellow mustard on plain white bread, never done mayo. Gonna have to try that!

    There was a little gas station on Riverside Dr in Ft.Worth that made bbq bologna sandwiches and they were good

    There was a little country grocery store near the Nucor Steel Mill in Charleston, South Carolina that served baloney and cheese sandwiches. Two pieces of white bread with mustard, a thick slice of cheddar, and an equally thick slice of baloney. The whole sandwich weighed about 1/2 pound and didn’t require anything else but a drink. Good, simple food. Darlington, South Carolina

    It also makes a great breakfast sandwich. Add a fried egg, cheese and BLT. Is a staple around my house.

    1970 We called them Bologna Star sammiches! We always had a round of that in the fridge... I like tomato on mine.

    Matt I have smoked many chubs of bologna. I love how after it is smoked how its taste Changes for the better. It will have a complete different tastes and my neighbors and I love it. All the smoking that I love to do I share with my good neighbors and they really enjoy when I smoke the bologna.

    I smoked my bologna chub today to 180°. It came out perfect and the Gospel rub tastes great on it. My fried bologna sandwich was wonderful. I fried the bread on both sides like you would if you were making a grilled cheese sandwich. I used miracle whip and lettuce and tomato on it. Another great recipe from Meat Church. Great Job Matt!

    Shout out to Levi! Lol! My grandma used to make us fried bologna sandwiches with tomato soup. I still make it for my grown up kids. Comfort food.

    Idk if anyone else has said it but fried bologna, toasted white bread, and yellow mustard is all you need! Grandparents cooked it for us all the time and it definitely beats white bread and mayo 😂 cheers and Geaux Tigers!

    When I make this recipe, I add a bit of a low salt rub (like texas sugar) to the top of the slice to give the sandwich a little extra kick. Always a winner with the family. Thanks Matt.

    I grew up on bologna and mayo sandwiches in the late 50's early 60's. Haven't had it in 40 years or more. Looks like I am going to have to do it.

    I used the same Bologna and used Swap boys howler yellow mustard as the binder with Texas sugar seasoning. Put it on my Weber 22 and smoked it with Hickory and Oak. To finish it off I coated the burnt ends with sweet baby rays BBQ original and they are amazing.

    Brings back memories of my childhood, we didn't cut the bologna as thick ( had to feed everybody ) and generally added a yellow mustard and onion along with mayo.... fried bologna is an all time favorite at our house!

    If you grew up in rural Alabama, in the 60s like I did, bologna sammiches on white bread was what you ate most days for lunch, especially when doing field work. But never as good as this method of dressing the bologna up. Washed down with a quart mason jar of sweet tea wrapped in newspaper and a paper sack to keep it cool.

    I can't remember the last time I had a bologna sandwich! I do remember as a kid I would cut a slit in the center so it wouldn't dome up while frying it. That looks fantastic Matt!

    Okay let's get one thing perfectly straight.
    I was raised in Texas and the south on a farm.
    I frigging hate fried bologna. 😂
    I was force fed this stuff for way too long.
    But yours looks good as usual and hats off to people that like it.
    With the price of meat these days I might start to like it again.

    I loved to come home to a Bologna and tortilla taco when I was a kid. Never tried the smoked and seared bologna sandwich, but I will now. Thanks dude. Always enjoy your videos.

    Thinking back over 60 years to 1961, when riding my bike home from high school, I was the typical famished teenager halfway between lunch and supper. If I had a jingle in my jeans I'd stop at the corner grocery for a single *thick* slice of ring bologna. I'd fry that up in my grand mother's cast iron pan (which I still use at 78) and chow down with Wonder Bread and Miracle Whip. That would carry me until 6 PM when my parents got off work.
    To this day I still love fried bologna. My wife thinks I'm certifiable.

    I grew up in WV and Eat Well bologna from SS Logan was a staple in our house. Love fried bologna sandwich with cheese and a fried egg. Love cold bologna sandwich with mustard and Snyders potato chips on it. My Mom also made us bologna salad sandwiches which were great. My wife and I now have her old grinder she used back in the 70s-80s to make the bologna salad for ourselves. After watching this I'll be smoking a chub soon.

    If I really want to go old school with my bologna sandwich I use the cheapest bread. Mayo both sides. 2 slice of bologna with 1 slice of American cheese. Then the key is to put it in a baggie and then in a plastic lunch box. Then you just let it fester in a humid building until lunchtime when the cheese has basically melted. So good.

    Man Matt I make smoked bologna burgers on a regular . I like your vodoo seasoning on them with a slice of pepper jack, yummy.
