My mother used to soak the eggplant slices to remove the bitterness but they were always mushy. I wish she had known about this trick to remove the water! This looks amazing! 😋❤️

I was taught to salt and layer eggplant slices between two plates and put some heavy medical textbooks( Robbins textbook of Pathology will do) on top. You get a lot more juice out. I like them thinner ( and perhaps flour, egg, breaded bread crumbs as in eggplant parmesean ?) and fried. They are crispier . Your slices did not cut like they were crispy . I will try your way first as it is so easy.

In this recipe th eggplant is not meant to be crispy, that would be a completely different dish, here the eggplant absorbs the sauce :) Much love

I had to learn that there is only one competition for the Hungarian sweet and noble paprika powder, and it is the Spanish one. Seeing that gorgeous color of the Spanish smoked paprika made my heart melt. I need to get some of that as soon as possible! ❤

Could you make the vegan version of this by omitting the egg? I think it might fry up that same, right?
Many recipes like this use "aqua faba" (chickpea or bean cooking water) instead of egg. I just directly crumb/flour mine, the crumbs/flour stick well anyway.
@@likkleginger I can’t have Aquafina since I am allergic to chickpeas. Any other suggestions?

@@lorrainemcwhorter2796 They make egg substitutes; looks like real beaten eggs sold in cartons. They tend to have it in the same cooler with the real eggs. Haven't a bloody clue what is in it; just grab one and have a good look at the ingredient list.
Aubergines (eggplants) have been bred so that today they are no longer bitter. Salting could still break some of the cell walls but this is marginal effect. Microwaving before frying is more effective.
It’s unfortunate that eggplants don’t ship well.
The ones we get here in Alaska are really pretty ugly looking by the time they get here

I wouldn't fry those eggplant just to put them into a soggy broth... might as well just bake them instead... save yourself some calories and satuarted fat.
