I cook a lot of different recipes, but have never been able to make a “WOW” eggplant parm. This recipe looks like that’s gonna change it! I enjoy your channel, watching you makes me feel like I’m right at home!❤️
You’ll have to let me know what you think if you try this! And thank you so much, that truly means a lot to hear💛
Recipe looks so easy to make. Easier than my mom's pan of over lapping eggplant Parm. I am definitely going to try it. I will also try baking the eggplaant.
I make it so much, it really is easier than you would think! Just a little time is needed. :) I hope you enjoy it!

In the same kitchen there is a rotten eggplant and a fly.......yet the end product is awesome !!! ;-) Your gentle spirit and transparency, plus your constant tribute to your mother, reveal that your are an excellent student, chef, and genuinely nice person. I am so glad I stumbled upon your channel.
Blessings !!!
This warmed my heart. Thank you for such kind words! I love my mom very much, and will always be grateful for what she's taught me. I'm really glad you stumbled on my channel too! Thank you for the incredibly sweet words💛 lol the fly and rotten eggplant
I loved eggplant and meatballs receipe best ever
I just made this for dinner tonight, using your marinara recipe. Once again a big hit with the family. A perfect dish. Thanks for the inspiration.
I'm thrilled to hear it, thank you for sharing and giving the recipes a try💛
Eggplant Parmigiana is NOT an easy weeknight dish which you hint at by relating your Mom and Aunt’s moaning about the time to salt, prep and frying the eggplant AND cleaning up . Plopping the finished dish into the oven is the easy part. Mom and Dad taught me to fry the eggplant which like meatballs is messier than baking in oven . Try both methods like you suggested at the beginning of the video. Salting the eggplant for ten minutes as you suggest is the most common method , but I prefer the Guido method of putting an eight inch high pile of sliced eggplant in between two plates and putting a couple of heavy medical books on the top plate.for an hour . You easily get 1/2 cup of bitter eggplant juice expressed out of the eggplant. Some like the eggplant to be peeled. You taught me a couple of tricks that I am going to try. Keep coming with the videos, please.
you're right, it's not an easy weeknight dish! lol I always make it on the weekend when I have more time. And happy to hear you could walk away with a few new tricks to try! Appreciate the support :)
Thank you for sharing your recipes!
of course - thank you!
This looks like a great dish, thanks for presenting
Thanks so much, John!

I grew up Italian and my mom was such a wonderful cook. She left my sisters and I many gifts. One of our favorites was her little book with all her recipes that our grandma left her. Her ravioli and stuffed veal breast are works of art. How lucky to still have all these great recipes. I made your chicken parm and it was a hit! Of all the ingredients that went into all these dishes, I have to say, that love was the perfect one!
that's so special you have her recipes! The family recipes are one to cherish. And I'm so glad you enjoyed the chicken parm :) Appreciate you sharing.
Thank you for the recipe ❤Blessings
Love it!! You are so great fine cook line lady! I love it. Tyvm
Hi Bethany
This recipe title made me look twice, Eggplant ??
I then googled it, we call these Aubergine in the UK, confusion over.
My wife and kids love Eggplant and Courgette, (Zucchini) so this it definitely one ill be making in the next week, as all your recipe's to date have been amazing.
Chris (In UK)
Yesss, I am sure it's confusing for anyone in the UK as I know you would know it as aubergine!! I hope you enjoy this recipe, thank you so much for the support, Chris!

Love your recipes!
Thank you so much💛
I will be making this soon. I bake everything if it is an option on frying. My favorite Italian dish every time!
Drew may like to try my all-time favorite dish. I serve it with fish especially - roasted eggplant. It also needs to be sliced the way you did these, Bethany. Roast on the middle position for the rack at 450 degrees F.
sounds lovely!! I love any and all eggplant dishes!
Just found your channel. Love your recipes. I will definitely try this one. ❤❤❤
Glad you found me, welcome! I hope you enjoy the recipes you try. Reach out if you have any questions:)
That Drew guy is the luckiest man alive.
He tasted the dish, and kissed the chef.
OMG

I’ve personally had this amazing recipe and I actually crave it now! Watching this made my stomach growl 🤣 my two year old actually enjoys eating this too not knowing she’s eating veggies and she’s a picky gorl. Totally recommend everyone to try this 😭🙌
Thank you so much!! Yes, I'm craving it too now🙃
Love EP ❤
Eggplant makes the best sandwiches!
ahhh yes so so good!

Would love to share a meatloaf recipe! My aunt has one she wants me to share:) I appreciate the support so much!
Great Job I will try it this Sunday for my grandson's First Holy Communion!!!
Lovely! I hope it's enjoyed💛
Another awesome recipe! Not a fan of eggplant, but my spouse adores it. Our local red sauce joint offers it and she always orders it. Thanks!
ahhh eggplant is one of my favorites! But totally get how you can dislike it. Appreciate the support! :)
Hi Bethany, can you please hire me as the official taste tester. Lol!! Great Videos Thank You 🙏
Of course! Come on over any time 😄
I've never thought of stacking. Ill try it. Have you ever tried it slightly grilling first for roasted flavor? My dream kitchen. A salud
oooo yes, stacking them is delicious! Still keep some space with the sauce though so it's not over-sauced :) I've not ever grilled it, but have always wanted to try it! thanks so much for the support!
Keep up the great recipes. How about your take on Amitriciana
@@vincents5042 Appreciate the recommendation, I'll work on that one! :)
I LOVE U! 🤟🥰😍😘❤🔥
Definitely will try this. What is the blender you're using?
A vitamix! It’s 10 years old and still going strong. I’ll link it in the video description!

Can you make a lower carb version of this using almond flour, or a different type of breadcrumb?
you could potentially do almond flour, if I were doing lower carb I would just do a lot of parm :)
I love eggplant but I don't like the skin on it I have to cut the skin off it looks absolutely delicious
you can for sure peel it! I love the skin, but I forgot to mention in the video you can of course peel it :)
The eggplant you baked , did you have to flip them over at some point to crisp each side ?
I don't flip them! They always baked evenly without needed to flip them. :)
@10:34 is that the San Marzano tomato sauce you perfected? Just wondering?
Yes!
What do you do with the cheese rinds?
I freeze them! I have a bag full of them currently lol. I put them in soups, stews, sauces!
This looks amazing, but why do you leave the skin on?
I personally love the skin, you can always peel it though!
YOU DO NOT HAVE TO BREAD EGGPLANT AND FRY IN OIL NO SLICE EGGPLANT AND STEAM UNTIL SOFT AND LAYER IN COOKING PAN AND BAKE
Too many steps for me but I enjoyed watching the video. 👍
It's easier than you would think, but I'm glad you enjoyed the video!
OMG that looks delicious 😋!!!
So glad to hear it does! Thank you!
