Just made this dish for dinner tonight. Followed instructions exactly, and it turned out better than I could imagine. It was a big hit with the family .I also used your recipe for marinara sauce. This will become one of my staples.
Dish looks Killer!! I have watched a few of your videos and wanted to compliment on how I like how you have nothing on your counter tops in the backround. It doesn't create a distraction so you can focus on the dish and what you are doing. I see your channel is new and IMO your a natural.

Speaking of eggplant! My family's putting in a request for a nice eggplant caponata recipe. It's a great summer dish and so versatile.

my mother (from Italy) would make a chicken eggplant parmesan. It was kind of a vegetable lasagna.
