Thank you for showing me how to cook eggplant I used to go to Felidia all the time when I lived on East 58th street. It was always a delightful treat to go there and enjoy all the delicious food on the menu
I always loved your cooking, Lidia, even before the social media came in. I haven’t watched TV-PBS much anymore but always missed your show. And low and behold, I wanted an Italian eggplant recipe for dinner tonight and your video popped up. So, now I’m following your recipe. You are so easy to understand and every ingredient is so easy to find. Of course, living in the big city. There is an always crowded Italian grocery store about 5 miles from where I work so I can buy every ingredient you call out for your dishes. Except for few things that most people can’t afford so I had order saffron directly from Italy. The best! Cheaper in Italy than the US.
I just found ur channel, but I love it so far one thing you said that is so important is moderation. I had gastric bypass surgery to help me limit my moderation way bk on 2003.. Big mistake if I would’ve known, then what I knew now about just eating in moderation I wouldn’t have had to go through what I’ve been through so thank you very much for stressing that.

That was a great cooking instructional video. I just ate a dish of eggplant Parmesan my wife made last night and I was just looking for other eggplant recipes because I like it. Your son is right these types of food tastes better the next day out of the fridge eaven the pasta wit cheese layered yummy .I can eat any baked Italian food straight from the fridge.
You put coarse salt on the eggplant in a drainer for about 1/2 hours, and it will release water. This takes away the bitterness. Then rinse off salt, dry it and its ready to use

Yeah this is an all afternoon project. Which is why I roast the eggplants on sheet pans for 20 minutes at 400 degrees
