- Eggplants are not all the same. Lidia choose and preps different eggplants, then demonstrates how to cook them. For eggplant parmigiana, a most popular Italian-American meatless dish, fried eggplant is layered with cheese and tomato sauce, then baked bubbling hot. Beautiful recipes. Thank you Lidia. I learned from Jacques Pepin to buy male eggplants if you look at the end of the eggplant it has a round mark, a female has a slit. The mail has very little seeds were the female has a lot of seeds.🇮🇹♥️

I just found ur channel, but I love it so far one thing you said that is so important is moderation. I had gastric bypass surgery to help me limit my moderation way bk on 2003.. Big mistake if I would’ve known, then what I knew now about just eating in moderation I wouldn’t have had to go through what I’ve been through so thank you very much for stressing that.

Yeah this is an all afternoon project. Which is why I roast the eggplants on sheet pans for 20 minutes at 400 degrees
@TheEvie202 never a while day, can do it under an hour unless you make homemade sauce and are cooking for an army.
