Beautiful, this is my wife's favorite dish. The only thing I do instead of a colander . I use a baking sheet tray with a wire rack. After I salt the eggplant. 👍🏾👍🏾

I followed this to a t, but added celery and garlic to my soffrito, a bit of tomato paste when it was nearly done and some white wine. My local market had fresh tiny mozzarella balls which saved some chopping. And I couldn’t resist some breadcrumbs on top. It’s excellent, and honestly simpler than many other recipes online.
The only changes that I prefer for my own is to use low moisture "scamorza", which is whole milk mozzarella that has a lower water content. Also, coating the slices in an egg wash before coating with flour will.makeca better crispness. Finally, adding some oregano to the sauce might be nice.

Such an amazing dish. You make the prefect verison. Eggplants are bar far my favorite vegetable weather its prepared Greek style, Italian style or Chinese style. That being said this dish might be my favorite verison overall!!!

This is very different from what is served here in the Northeast US. Here eggplant parm is used as the filling for a submarine sandwich. I've never seen it served like lasagna. Looks delicious, I'm definitely going to try this.

I have tried this twice, i always end up with water in the bottom of the dish. I salt and press the eggplant as suggested to remove water. Do i need to cook the Passata dryer or add corn starch? Can you verify the oven settings as i have had to cook at about 380-400 instead of the 350 suggested.
