I followed this to a t, but added celery and garlic to my soffrito, a bit of tomato paste when it was nearly done and some white wine. My local market had fresh tiny mozzarella balls which saved some chopping. And I couldn’t resist some breadcrumbs on top. It’s excellent, and honestly simpler than many other recipes online.

For extra crunchiness of eggplants, how do you feel about frying them like a German Schnitzle? Flour>Egg wash>breadcrumbs>pan. Very cute dance and amazing looking dish will try it.

I like to layer everything without frying or anything and broiling immediately in the oven it's lighter and still very delicious it's similar to musaka in Syria Lebanon Turkey thr vegetarian version I add kashkaval cheese 🧀 it's abundant here

I have tried this twice, i always end up with water in the bottom of the dish. I salt and press the eggplant as suggested to remove water. Do i need to cook the Passata dryer or add corn starch? Can you verify the oven settings as i have had to cook at about 380-400 instead of the 350 suggested.

This is very different from what is served here in the Northeast US. Here eggplant parm is used as the filling for a submarine sandwich. I've never seen it served like lasagna. Looks delicious, I'm definitely going to try this.
