Eggplant Parmesan: Original vs Gourmet with Neapolitan Cook Carmela Abbate and Chef Angelo Sabatelli

- The new episode of the “Original VS Gourmet" series is all about "her Majesty" the Eggplant Parmigiana. We traveled all the way to Zi Teresa in Naples to discover it with the historic cook Carmela Abbate. The second stop is Putignano, Puglia, inside Angelo Sabatelli's Michelin star restaurant (just wait for the upcoming Sicilian version of Parmigiana!). The classic Neapolitan recipe is opulent and "generous": ragù, provola and fior di latte, are the steps to the ancient popular tradition of Campania. Sabatelli's dish, on the other hand, uses different cooking and glazing techniques to preserve the original flavors, giving life to a gourmand but at the same time very light Aubergine Parmigiana. We couldn't stop eating them... What about you?

Carmela has a smile on her face the entire time she’s cooking and talking about her food. She’s so beautiful
There's so much love and respect in Carmela's cooking it's incredible. She is a great cook and a great teacher. There are many great teachers and cooks in this channel but she is smth else. A joy to watch.
caro enrico porzio ahhah
CARMELA Patrimonio dell'UNESCO
Encomio solenne!!!
Guido Bullano, grazie ❤
Daccordissimo!! Carmela Abbate una rara santa!
🥰🥰🥰🥰
La seconda era la parmigiana orientale.
"I'm sure I made your mouth water."
Too right she did. That looked terrific.
those who benefit most from watching these videos are foreigners because of the subtitles, they will be able to definitively understand things and details that they could never have imagined before. Carmela...
Yes, I really like the subtitle. I'm from Thailand and I love cooking Italian food! :D
I usually come to this channel for the recipe. Good to see how Italian chef cooking.
homie, have you heard about … books?
You are 100% correct. This Channel gives a whole new insight into High quality Italian cuisine, grazie mille a tutti gli chef e Italia Squisita.
it doesn't help that the meat used is around $100 - $150 where i live
I've learned amazing details about Italian dishes from the channel that are not covered in any recipe books in the UK. My favorite cooking channel.
W. NAPOLI....
Your channel is the best food channel on youtube imo. THANK YOU for making subtitles in other languages!
When I think about Italian cooking, ladies like Carmela is what I think of, they somehow make magic everytime.
No magic involved. She’s just a fine chef. You expect so very little from old people. Aren’t you condescending!?
lepauvrehomme What on Earth are you talking about? Fine chefs make magic in the kitchen. Have you ever been to Italy and tried mama or nonna cooking ? It’s not condescending to appreciate mastery. Get off the internet, take a walk and breathe in some fresh air, you’ll find you’ll be less offended more often. Now that’s condescending! Lol
@@eldersammy100 I dunno I think boiling someone down to a stereotype could be offensive. There's no reason to think a well trained young person couldn't create a very similar dish. The fact that she is a woman and learned from her mother doesn't really have anything to do with it.
@@eldersammy100 what makes you think that I’m offended?
The lady knows her craft. If people make magic then they’re not chefs but magicians. I’m only judging you by the daft comment you made. I am familiar with the Italian language, cuisine, traditions, and most importantly their genius. You look at them as part of a freak-show. How are you being condescending to me? I don’t get. I shouldn’t have used that word; you don’t seem to understand it’s meaning.
@@lepauvrehomme I lived in Italy for two years, travelling all over the country and volunteering to help the elderly. Your both internet saddos taking offence at a compliment and something any Italian would say, find a young Michelin star chef and their fav cooking would still probably be grandmas. You both know nothing, look at the likes of your comments vs mine. Again how about instead of nick picking random RUclips comments looking for absurd things to moan about, you do something worthwhile with your lives, it’s so damn sad!
Thank you for subtitles 🇮🇹💚🤍❤
I didn't think I'd enjoy the second recipe, but it was so incredibly inventive, and clearly delicious. Bravo!
have you tried the second recipe??
@@chadsnyder33 No, I use the same recipe I always have since everyone likes it that way.

Riprese, montaggio e testi ottimi d'accordo.
Amazing. Italian cuisine is the best in the world.

That traditional parmigiana is simply gorgeous, sumptuous cooking. Art. Italia Squisita has given me so much inspiration in my own kitchen, and otherwise food for thought (pun semi-intended).
Love the modern version Chef Angelo made! Carmela's classic version is more for something at home for a nice family diner. Both looked mouth watering.
È un capolavoro! Grazie.
Mio Dio, che piatto delizioso e bellissimo. Grazie !!!
Sei fantastica, Carmela!!

Who on earth would give a thumbs down to this wonderful recipe ???? People are so sad ... Congratulations for the video . Grazie mille !
I'm madly in love with your craft... The most of simple ingredients are transformed into a marvelous dish... !
Thank you for sharing...
Love this channel...❤👍
The traditional version looked absolutely AMAZING ! I don’t know about the newer version, I definitely try it though.
È meraviglioso quello che hai creato. Bravissima!!!
I stick with the traditional version.
You can learn some very useful tricks in these re-imagine recipes on this channel. Take the small components, like the parmigiano cream in this recipe, and use it to elevate other dishes. I can imagine using that cream at a topping when plating traditional lagsana.
Peter, try using knife and fork. You are about to discover a world where you can eat without becoming sticky.
Is this a Gino D'Acampo reference?
Signora Carmela, mi adotti? Grazie
Che meraviglia! Grazie 🙏🏻
Complimenti a tutti e 2!! Spettacolari!!
Thank you from New York.
Omg that cutting of the eggplant was sublime! Great video
Grazie Carmela! This is heavenly!!!!!!
Meravigliose le due versioni. Siete due artisti!!!

These are brilliant . Italians are such precious cooks and make exceptional dishes . its clear watching both the french and italins cooking that they take great pride in it . my friend a renound historian always says we won many wars against them because we made a dish called stew in which we chucked whatever we found into it and got on building weapons and armoury. i much prefer these guys food but also enjoy the stability of our sterling . best of both. great channel thanks
