    I made your egg plant dish right after watching this video. It was absolutely delicious. I am taking care of an elderly lady and she didn’t want to eat. I put some on a dish and acted like I was going to eat it and offered her a bite, she couldn’t resist especially after the first bite. I told her it was egg plant Parmesan she said I love egg plant and this is the best one I’ve ever had! It was really delicious. That’s all I ate for dinner. Thank you for sharing.

      Looks nice but you said the bottom of the pan would be the presentation side but then you did the opposite, so maybe next time put presentation side on top in the pan. Covered with breadcrumbs though it hardly seems to matter.

    My mother was Sicilian, but she and the whole family decided to go to Brazil, to the city of São Paulo, where I was born. My mother was an excellent cook, we even thought about opening a restaurant in Brazil, but unfortunately she became ill. Our house was more Italian than Brazilian, and watching your videos, I remembered the wonderful childhood I lived. I loved the channel!

      ​@@GiovannaBelliaLaMarca Yes yes Giovanna! I am lucky to have been born with a really developed sense of smell and I thus avoided some small domestic disasters in my childhood 😂. I was the 1st one, in the family, to detect suspicious smells in the kitchen for example 😅. Of course my olfactory memory is linked to many emotions who last all the life long, and even at 60 years old, I can be surprised by a new rising memory! Kisses from France! 🇨🇵❤

      Fortunately, eggplant is not a seasonal vegetable, so, we can enjoy it anytime! PupCake the Toy Poodle and Pom Pom the Standard Poodle are our beloved Granddogs, and they are marvelous compagnions and playmates to our whole family!

    I adore eggplant and when I fry it, I usually eat most of it just plain fried so I get the yummy flavor. This is my first time watching you and I'm thrilled that it is 'plain' eggplant and can't wait to try this dish. Thank you so much.     What a lovely way to present fried eggplant. I appreciate your mention that cooking uses all senses. Learning to smell and listen to food as it cooks is such an important skill, so much more useful than relying blindly on an arbitrary time. You are an excellent teacher.
    I also love that you have your pan, still in good condition after five decades. It is depressing to watch people using non stick pans over very high heat, then saying that non stick doesn’t last!
    So happy to have stumbled upon your channel!

    My mother came from Italy after WW2 and also made her eggplant the same way except she baked hers. So delicious. My prized possessions from her kitchen are her handwritten recipes a few pans and her rolling pin. She was a wonderful cook and a kind lady. I miss her so. Grazie.

    I really appreciate your gentle and warm presentation. I subscribed to your channel when you said you use chopsticks when gardening. I use chopsticks for so many things. In addition to gardening, I especially use them for my arts and crafts. They are good for mixing paint and other 'dirty' things. I just throw them away when finished. Along with disposable chopsticks, I make good use of paper cups for making dips or marinades, mixing things and more.

      My father was great at making omelettes so we purchased him a pan like that only it was in a half-shape......one side was straight, the other side rounded. If you wanted to make a smaller version or half size, you could use the omelette pan. Those are surely available.

    I watched for pointers, because I make lasagna with layered eggplant and zucchini in place of pasta, which I cannot eat on my low-carb diet. I did pick up a few fine points about preparing eggplant. Thank you. But now I am inspired to make Melanzana 'Ncaciata, which I think looks delicious and I know would bring variety to my table..

    I have been doing this wrong all these years I fry the eggplant in egg and flour. Plus I put buffalo mozzarella in between the layers with the tomato sauce and for the top. I am going to try this exact recipe now thank you for this. Just discovered your channel and cook a lot of Italian foods.
