My château family enjoyed the eggplant recipe tonight but we thought it needed to be cooked a bit longer or we would precook the eggplant a bit before the toppings are added and it was baked … next time. By the way, in Canada we live in provinces not states such as in the USA. I am from a city called Mississauga just west of Toronto in the province of Ontario. Little too much black pepper and paprika as well. This is why Italians are such great cooks, they hold back on a lot of the spices so that they don’t overtake the actual flavour of the other ingredients.
