Spinach side dish (Sigeumchi-namul: 시금치나물)

  • Sigeumchi-namul is a Korean side dish (banchan) made of blanched spinach seasoned with soy sauce, garlic, and sesame oil. The spinach is only slightly cooked, leaving it a little crispy, but still soft and tasty.

    Because it’s so easy to make and so delicious, it’s a very popular and common side dish among Koreans. For many Koreans an easy, simple everyday meal consists of rice, kimchi, a stew (often doenjang-jjigae), kongnamul-muchim (a bean sprout side dish), and sigeumchi-namul.

      that's wow maangchi! I really like your recipes and way of explaining. But maangchi in our side, we take so much time to clean spinach as it might have little insects, webs etc and we don't waste water with which we use to cook or boil spinach (It has all the spinach nutrients everything right). But you just cleaned the roots and used it (Don't you have such worms problem with spinach? Is it not necessary to look for it?). I see that spinach is almost cooked in that boiling water which you drained it later (Don't you think it losses nutritional value?). Hope you clear my doubts maangchi :)

    I made this yesterday and I could not believe how deep the flavor was. I kept going back to the recipe wondering if I added something else to it, but it was just simple ingredients. This spinach is fantastic, and I truly mean that.

      I love Korean humor. When I was a little girl I would watch “Korean comedy’s”. I only know like 12 words, but when I watched those shows I could understand, and I would laugh, sometimes historically. My mom would ask me, “what’s going on” and I would tell her. She was amazed how much I could follow just from their body language and how expressive they were.

      @@indianajonesprincessleia, I was stationed there February 1976-June 1977 and June 1979-June 1980 and loved to watch Show Show Show. The first time my sweet lady and I watched TV together she was trying to find something for me to watch and it just so happened Show Show Show was on and I saw it and asked her to go back to it. I don't think she really believed I had been in country before until then. I just liked the variety of acts on the show.

    So interesting and delicious! In the middle east we eat exactly the same side dish but instead of sesame oil we add olive oil, and instead of soya souce we add pomegranate hone (which intrestingly looks like soya souce), and finly onsteag of sesame seeds we add walnuts.

    I recommend adding a bit of vinegar, i used rice vinegar and it gave it some sour- and sweetness! This really brought out the flavours in the spinach and it went well with the sesame oil. :) PS. I really love this side dish, it never lasts longer than a day.

    This is amazing!! I've started making a bulk of my veggies with Korean recipes because, let's be honest- American veggies just don't taste nearly as good. After starting to read your recipes, I've been adding tons of veggies to every meal becuase they're just so DELICIOUS!!       Try Indian dishes as well. U will get lot of veg dishes in India. Coz India is basically a vegetarian country.

      We Americans often cook our veg in water. It's boring. Roasted or cooked with oil/butter and spices are the way to make them interesting. Indian: agreed!

    I make this basic recipe every week, but I substitute spinach with kale. I feel like the leaves of kale keep their springy texture, even after blanching. Doing this to almost any leafy green veggie is the best way to get some healthy food into your diet! Thank you Maangchi!!

    I made this and it was really good!! I wanted to make it again today but I realized I was out of spinach and I was feeling to lazy and sick today to go buy some. So, I looked around what I had and found some packets of dried seaweed (nori). I cut the seaweed into 1/4 inch strips (2-3 sheets used total per serving), put them in a bowl and then poured a cup of hot water from my kettle on top. I drained the seaweed and did everything else as you did in the video and guess what? it was delicious too! So, I figured I could share this in case anyone doesn't like spinach or something. Just don't keep the seaweed in the hot water for more than like 30 seconds or it might get too soft on you. I was using some basic rosted seaweed that had in pack of 10 sheets.

    Loved it, super easy to make n tastes delicious & indeed incredibly healthy. Just that I added extra virgin olive oil instead of seasme oil and roasted sunflower seeds instead of seasme seeds, as I didn't have those

    I've been making this for a long long time (child hood favorite that my mom made for us) but I never knew what it was called! Mom just called it seasoned spinach log, as she packed it into a log shape. Now I know and I'm looking forward to eating it even more. Yum!

    I made this recipe, and it was amazing! The simple ingredients all play beautifully together- the salty soy sauce, the flavor-carrying sesame oil, the bite of the garlic and scallions. It’s all delicious and came together in 5 minutes, once the water boiled. I’ll definitely be making this again!

    Made this dish and the eggplant soy sauce side dish for my family yesterday. I really thought they were not going to like it because it's not one of their comfort foods. But I was wrong. Both my 5 year old and my hubby loved it. I also made beef strips and white rice. Awesome combination. Perfect side dishes. Thank you for giving us cooking ideas. I love your channel. I love watching but most of the ingredients I can't find in Yucatan, Mexico. Still I improvise.

      From you? 💐 of Spinach! I hate you tube for unsubbing me but i found u again. I grew up with American southern food. It gets very old once you know how to make everything perfect and love so much other food! Your videos have inspired me so much and i have tried so many delicious food because of you. I have a husband i sometimes JUST cook for. I don't tell him anything in it until he cleans his plate and then realizes how many things "he doesn't like" were in the same dish he thought was delicious! Good food is good food! No matter if it sounds strange or different. That's why I make him taste everything first. Your recipes open minds❤

    Now I know what I had been eating. I always tried different dishes to see if I liked it and this is one of them. Most people in the U.S.A. cook spinach too long. Those are the same type of chopsticks I learned with too. Got to where I could pick a grain of rice off the side of the bowl. Love the knives...👍🏾👍🏽
