We decided to go back end of August until mid September this year, also visiting the Costiera Amalfitana, and we cannot stop crying, it was paradise on earth. I know I was Italian in my last life because I have a memory of drinking a prosecco on a piazza with shopping bags around me. Everything you have been cooking is resonating with me and I cant wait to cook! My grandma always said I was switched with an italian baby in the hospital or something like that lol.
same thing for me😆👍 I'm Italian in the sense that I grew up in Italy since I was 3 years old, in a Marche family, but I was born very far from Italy, and also from the sea... but I live on the Recanatesi hills in a few km from the Adriatic Sea, which can be seen perfectly, where the poet Leopardi wrote his "Infinity"; I've been living here for 31 years, and I could never imagine moving anywhere else... it's my home, taking this away would be like taking away the air I breathe.
Nonna Lida knows what she's doing. That sausage gave the pasta flavor. The final pasta dish looked so juicy, mixed with the perfectly 😊 tored greens. Perfect bite. Nonna Maria was cute as can be.
That roasted gnocchi was the best looking dish. I don't like pasta. I love the stuff that goes on pasta. The vegetables, the sauces, the cheese. Maybe if I made homemade it would be different. Keep creating beautiful dishes. ❤
Beautiful dishes and episode. Jamie is a talented Chef indeed. That said, Genaro seems to have always be the one who did 'the hard work: scaling and gutting the fish (Naples episode), smashing the basil-walnut-garlic-cheese for making the pesto (this episode) and he gets the leftover of the first pasta dish (with the sweet peas) Jamie made in this episode. He didn't seem to mind.. but poor Genaro.. :(

Loved your video and enthusiasm! But I was puzzled by the gnocchi dish with only potatoes. I always thought you mixed potatoes and flour to make gnocchi. Comments?
Cacio e pepe is apparently simple, but it's actually one of the most hard to make, because the water will always tend to separate from the fat of the cheese (like in mayo). And that is not the way to make it: you have to make the sauce first, then add the pasta. Gran bella donna, BTW.
Inside skirt is the thicker flank steak, outside skirt is the thinner cut. Comes from the diaphragm and stomach outside area. Was a cheap cut ,almost free until fajitas came along .
It s quite incredible how many English people who live in Italy or deal with Italian culture or food like Sting and Oliver after decades still haven't learned the Italian language. What's their problem ?? 😮

What cut is the beef skirt? In the US they only think of a skirt steak that is a thin steak and not cheap either.
