It’s Autumn and this week Jamie is in Tuscany tracking down the Nonnas who hold the
key to the regions hearty farmhouse cooking. In the picture-perfect Chianti countryside
he meets 88-year-old cookbook queen Nonna Miriam, who teaches Jamie her all time
favorite beef stew with homemade pappardelle pasta. Jamie cooks up a ragu that
takes the humble spag bol to the next level and then heads for the hills where he
recreates a mindblowing Jewish Italian recipe.

Thanks Jamie, you are just the best! Thanks for sharing this and the other episodes. I enjoyed it the first time, now it's here to re-watch. The people are inspiring and friendly, and the places amazing. The combing of the olive trees is interesting, and that they just want to break even rather than profit. Hopefully living costs, clothes, medical , maintenance etc. are part of the breaking even budget.

That's it that's it. The steaks... The best quality meat does not need a lot of seasonings. You want the quality of the product to always shine through. Roasted or broiled on the right temperature (don't over cook it or you lose the amazing juice's) and let it rest for at least 5 to 7 minutes covered so that the juices return to the center of the meat. End with just enough quality sea or kosher salt and ground black pepper to taste. With the best cuts of meat you just want to taste the real quality of the meat. You do not need extra seasoning. Try it and you will see😊

Hey guys I’m trying to find the name of her cookbook can anyone help!
The very thick cuts shown in this chapter of the video have virtually no internal marbling. And they don't season the meat. So, where does the flavor come from? Over the last 20-30 years in the US, the industrial beef we get, including prime grade, has lost all semblance of flavor. The differences in different cuts is simply a matter of texture, not flavor. So, you either season it heavily or concoct a flavorful sauce. The meat on its own is totally bland. I watch the bearded butchers in the US talk about beef flavor when they cook a cut of beef. But they have covered it with a huge amount of their blends of spices and seasonings. That’s what they taste, not beef. So, I ask again, with no marbling and no seasoning of a bisteca Fiorentino, where does the flavor come from?

I love it. But why to put lemons on steak Fiorentina? It's not how it's served. The meat inside was to light pink for some reason. It suppose to be dark red and little bloody. I think their heat source wasn't hot enough/too small fire.

love all the cooking and the eating.. what I dont get is for all the talk about "climate change" and how people are trying to cut back etc, I see more meat or sea food or poultry etc being cooked.. I doubt Jamie Oliver could get away showcasing italian cuisine without talking about the meats etc.. I guess it is better to bullshit that we are doing things around climate change but in reality we all would never be willing to cut back in anyway that would affect our quality of life...
you are right thar italian cuisine has great vegetable dishes, and i was a bit disappointed too to see so many meat in the dishes. I think traditional italian cooking was mainly vegetables, with a little bit of meat or fish here and there....yes i d love to see more vegetable preprations, its a real art to prepare them in an interesting manner all year round
