      I suspect that this video was illegally uploaded to RUclips without permission. This material is taken from the DVD "Essential Pepin," and Jacques deserves to receive royalties from the sale of his DVDs, which won't happen if people can watch the video without paying for it.

    I hope that everyone watching this video realizes that this man is a genius and a national treasure. Imagine having Albert Einstein teach you basic arithmetic, all the way through advanced nuclear physics. That, in the kitchen, is what what we have all been gifted by the great Jacques Pepin. Now realize that he been an instructor for more than half a century and all of his techniques are available to the world both for purchase and, in many cases, for free. Chef, you have changed countless lives for the better and you are owed an endless amount of gratitude. On behalf of mankind, thank you!

      Jay, you have put the essentials of gratitude in the right words to the most merited recipient for his quality of work and simplicity of communication in the teaching. Most of us, cooks or not cooks, want always to learn some essentials of decent cooking as well as learning some principals of maths and physics. We all were lucky enough to arrive at this video presentation, and we've got impregnated with the taste to follow his lead. Chef Jacques Pépin deserves all kinds of recognition and our humble gratitude.

      @@fortazerty you can also put a whole egg, mustard lemon, seasoning into a narrow high container, blend it with a stick mixer, dump in a good quantity air oil and then blend and at the same time pull up slowly so the mixing blades pill in a little oil at the time, my mom showed me that and it's like magic. (I failed at the first attempt, because I was impatient and gave up too early, but well, everything working on the first try would be boring 😂)
      I like making my own mayonnaise but one egg yields for me about half a liter of mayo, and I alone can't eat that much at once, and self made mayo sadly doesn't keep that long 🥺

      @@fortazerty it's not really a recipe, since there aren't any measures or ratios, it's more of a freestyle way to make mayonnaise, I think my mom got it from a cook somewhere in France like ages ago 😅

    I love this man, I practice his omelette technique almost every day, still can't do it as well as he can. But this is the amazing thing, I have been eating omelette all my life and never had it the way he makes it. I will never make it any other way now. Such knowledge and humility. I got tired of just copying recipes and having to buy ingredients for one dish that breaks the bank. Thus I started teaching myself techniques so that I won't have to be reliant on some celebrity chef's cookbook and stumbled upon this. This is pure gold. Learning so much, will definitely watch this over and over to infinity.

      Watching it now and I saved it to go back to, a technique class to look back on, I have a feeling like trying ice skating after watching the olympics I will need to review the moves and add in lots of practice. He is a Master, so it is all so natural for him now..

    There is not a shred of doubt left in my mind that Chef Jacques Pépin is the penultimate living master and teacher of the culinary world!
    I just spent 4+ joyful hours of watching and rewatching a genius sharing his life-long expertise with the world; and I will revisit this many more times. It feels like I attended at least 2 years of culinary school.

      My favorite episode was when Jacques and Julia made hamburgers. Those two ate theirs with such gusto that it was an absolute joy to watch them consume every bite---proving that something so basic and uncomplicated but well-prepared is very delicious.

    I remember watching Julia Child do something on clarifying stock years ago on PBS. I also remember watching my Grandma doing this and how she seared meat. My Grandma, Julia Child and Chef Pepin taught me how to cook.

    This guy's skill with cutting meat is unreal. Makes me feel like I don't know anything. I don't want to be a chef but I would love to find a class that teaches these techniques. I think its an important skill to have, considering the price of meat these days. If you have this kind of skill with the knife, you can buy fish and poultry whole and save a lot of money.

    I love how the Table of Contents is listed below the video with the exact place to find the technique you need by Fast Forwarding to it. I have watched him for years.. have his first few cookbooks before the internet.. love his boigrphical information....no chef can touch him on any level. I started watching him 30 years ago on PBS.

    It is a privilege to be able to see something like this on the tubes. Think about it, Jacques Pépin started his cooking journey at the age of 13, and now we get to watch his abundance of knowledge and condenced experience of 70 years for free.     When I was at highschool I remember they were playing these as shorts during ad breaks on the cooking channel. I have learned so much about cooking from Jacque Pepin and he is classes above all of the modern celebrity chefs.

    Merci Mr. Pepin, merci chef. Quel ouverture d'esprit. Quelle générosité. Nous faire profiter de tout ce savoir. Elaborer, concocter, peaufiner un tel reportage afin de partager votre savoir, vos expériences. Ou du moins en partie bien sûr. Personnellement je cuisine depuis plus de cinquante ans et que nous avons tous nos habitudes, nos 'trucs" et nos recettes. En deux mots notre savoir faire. Et partager à toujours été mon cheval de bataille. Intéresser les jeunes aussi et leurs apprendre la subtilité des saveurs, des parfums et les accords de ceux-ci. Développer les dons, bien préparer les mets en leurs donnant le goût qu'il méritent. Je vous salue respectueusement et vous merci à nouveau.

    His teaching technique is as good as his kitchen skills. This made me smile the whole way through but the apotheosis must be at 39:30 when he describes producing the "perfect parallelepiped" of potato...

    I came across this video quite by accident. I'm blown away by Jacques Pepin's techniques. He's a terrific teacher. I just learned many new things - how to make crepe suzettes; how to clean leeks; how to clean artichokes; and other techniques I never knew how to do. He is focused and is thrifty with his time. Where was he when I first got married? I could have used his techniques. Thank you so much for a wonderful learning experience for this seasoned cook. He's a gem.

    I am going to treasure this encyclopedia forever! Who are those 71 dislikes? really??? Jacques's competitors? do they have better techniques?
    I never know there's a way to tie an apron! screw those so called Master class, they talked too much
