I always like Jacques because he seems like a regular person. He does not act like an arrogant celebrity chef even though his name is known worldwide. He has accomplished more than most men ever will, but he still just keeps everything simple and down to earth. He doesn't add pretentious flares to his food. He is always relatable to his audience, no matter what their skill level.
Props to Josh for standing next to such a master (takes guts!) and quickly falling into learning mode while managing his awe, Jacques is the ultimate teacher!

As a professional cook, I still haven't seen anyone with half the skills and techniques as Chef Jacques. It's just years and years and years and years of practice and repetition. I bet just about anyone will be trying to impress a legend if they could cook right next to him. But what a great video and for making it
Wow. This man is a freaking legend. We had to study him in culinary school. The grandmaster of culinary. I honestly had no idea he was still alive. I don't feel worthy.
It has become clear to me Jacques has more knowledge in his brain than he is able to impart in these short videos. What a gem, a master, a true artist.
People must remember that Jacques skills were born in a restaurant where speed was required. His comment about the amount of potatoes he could peel reflects this. Don't be discouraged if you never become lightning quick like Jacques. He had to be quick or find another job!
ChefJacques makes it look easy! Knife skills will help you get a job in a kitchen.. when I was a young cook I practiced day after day till I was comfortable with my cuts. Now that I'm a older chef I am glad I practiced as much as I did when I was younger!! Thanks Chef for all you have done for us!
Young guy keeps bringing up stuff he learned in culinary school and Jacques is like ”um, ya...sure?”. He has so much experience he has surpassed traditional technique and knows what works, especially for him. He has mastered his own technique.
Interesting you say that~ I was thinking the same exact thing! Chef Pepin was incredibly gracious & unpretentious-- but let's face it, without meaning to, he schooled the kid. Young Chef Josh got more humble & respectful as the tutorial went on, and I was glad to see it. Mssr Pepin is a living legend; it is an incredible honor to have the opportunity to learn from him. Some day Josh will realize what a privilege he had in this video. :) Meanwhile I'm knocked out by the elder Chef's amazing skills, perfected over a lifetime. The way the host Josh handled the show was amazing... you can see he is really interested in everything Mr. Jacques Pepin had to impart. and how much respect he has for Mr. Pepin. He also manages to establish carry on a light banter with his guest

Just remember though: The amount of wine you consume is inversely proportionate to the number of fingers you (are forced to) learn to use! In other words, the more wine you consume, the fewer fingers you get to use! :-))
I started watching random Jacques vids today, many of which I've already seen, never thinking I'd learn something new. I've been a chef for 25 yrs...and never have I seen the mock cherry tomato technique until just now. This is one of the numerous reasons why I enjoy watching him as much as I do. No regard to how long you've been doing anything, there's always something new to learn and discover.
I find it amazing that Jacques Pépin is such a master, yet so humble, humorous, and relaxed as he teaches. Besides watching him to learn, I watch him to chill when I'm stressed out. Finger cuts are no fun, and take time to heal, and after dinging myself a few times, which since I'm a piano player is even less fun, I came across another Jacques Pépin video explaining basic knife skills, and (knock wood) I haven't cut myself since. Merci beaucoup, Monsieur Pépin!
I love how respectful Josh was. He’s leading into each section, as that’s his job - and he’s setting the context (ie what the technique is called at culinary school, and why they are taught it) - but then every time, is asking Pepin how he would do it, and any other hints or tips - then he’s watching, listening and smiling, as he knows this guy is the master. A terrific clip. I’m going to save and return to this over and over....
I'm so impressed. He did every vegetable different to everyone I've ever seen. It's like he's studied every miniscule movement for the best possible way to do EVERYTHING.

Over 45 years ago I learned everything I know about the "process" of cooking from watching Master Pepin, I learned about so many other aspects of cooking from others, but without his superb instruction and love for the elegance and precision to the basics I would have never grew to love and master the art of cooking that I enjoy to this day at 61. He is truly the master and unquestionably the grandest gentleman of the kitchen that ever lived. You are so lucky to have the opportunity to have been in his company. Thanks for sharing this lovely program.

From a quick run through, what I like about this video is that Pepin goes through all of the essential knife skills and techniques that he knows. A lot of the other videos of him online are just of him cutting one or two pieces of produce. This demonstration reminds me of what I used to see on his PBS shows growing up. Jacques Pepin has been one of my heroes from my teens and that was what drew my attention to this video. Josh clearly has some skills and knowledge and I very much appreciate his abilities. I learned these same or similar techniques from my stepfather when I was a child and watching this video took me back to those days. Lucciano told me that no matter what you do, "do your best when you start, and then do better the next time". He followed that with "and when you feel like you have mastered something...find the real master and start over". Josh, and Jacques have demonstrated my stepfather's advice perfectly here. Thank you gentlemen.
Chef Pepin's knife skills are on a whole nother level. I have been cooking in restaurants & still have not seen this kind of skill up close. Respect Chef.
Getting a one-on-one 30 minute lesson in knife skills from Jacques Pepin is something we can all only dream about. Every time Chef Pepin opens his mouth, we learn something. And he handles this kid well, does not talk down to him...but it's very clear who is in charge here!
I love Jacques Pepin, I watched his cook show almost every day, beside a few others anything he has to offer in the culinary feel I take truely to heart.
I still remember a PBS show where JP states that if you keep your knives sharp, if you cut yourself it heals quickly (and ended with a sly smile). Tip: Silipat mats under the board are a great stabilizer. Such a great video. Nothing more inspiring than watching masters of their craft. JP's charm, gentle instruction, consummate skills shared generously with great humor has helped so many of us home chef's tackle anything in the kitchen intrepidly. Thank you for producing this wonderful video.---and the real plum....the Jaques Pepin Foundation to teach culinary and life skills to those in need....
83 vs probably 33 if I had to guess...50 years his senior I’d expect Jacques to have a few skills to teach him. I’ve been watching JP for 35 years...he’s one of the best right up there with Julia. Kid had a valuable opportunity to hang out and spend some time in the kitchen.
This shows the greatness of a true master. The man you are calling a kid is a test kitchen professional. Meaning he knows his stuff. He's very good. The fact that he was taught new techniques from Jacques, shows how great Jacques Pepin really is.

Although I have never met him, more than any one person in my twenty year career as a professional chef, Jacque Pepin taught me the most about basic skills and technique - the best chefs that I worked with were, at heart, teachers and mentors - Jacque embodies this spirit more than any !
I learned how to cook and how to use a knife about 25 years ago and in no small part from Chef Pepin. I used to record his shows starting with "Cooking Techniques" and I'd watch it over and over to pick up every technique. It's difficult to think of anything else that's improved our lives more than learning how to cook really well from scratch. What a lucky kid, to learn from not only a true master, but an international treasure.
The best knife-skills tutorial I’ve ever seen! How cool it is to watch such a seasoned expert - a real artist with food, and such a charmer too! The knife is an extension of his hand. Nice to know that I have been doing at least some of these techniques correctly - now I can refine the rest! Over the years I have bought any number of fancy chopping gadgets and one by one they have gone to charity shops etc., and I always end up turning to my knives and a chopping board. With the right technique, you can do absolutely anything with a good sharp knife. I’m just a humble home cook but I love to learn how to do things correctly.

I’m a first time viewer and new subscriber. I have always loved Chef Pepin. This video was so endearing and Josh was a great sport, and a class act, and knew just when to step back and let the master shine.
I see people dissing Josh, but I think that it's still his show and Jacques is still a guest. People will say "shut up punk and let the master talk," and I do think our host talks a lot, but Jacques' humility is always present, especially if/when he is on someone else's show. Again, Josh is talking a lot, especially when the man teaching everyone isn't on the show as much as the dude we see every episode, but Josh is helping to have structure in the show, because it's still his show.
Just started this video and I love one of the first moments. Josh shows how he was taught to hold a knife, and asks Jacques if that is how he does it? Jacques says, "Well, I don't know" then tests himself. "I guess I do." Love that! One of the definitions of mastery is when you do what you do so naturally you don't think about it and aren't really aware of how you do it - just what you are achieving. Think of driving. Its like that.

From a quick run through, what I like about this video is that Pepin goes through all of the essential knife skills and techniques that he knows. A lot of the other videos of him online are just of him cutting one or two pieces of produce. This demonstration reminds me of what I used to see on his PBS shows growing up. Jacques Pepin has been one of my heroes from my teens and that was what drew my attention to this video. Josh clearly has some skills and knowledge and I very much appreciate his abilities. I learned these same or similar techniques from my stepfather when I was a child and watching this video took me back to those days. Lucciano told me that no matter what you do, "do your best when you start, and then do better the next time". He followed that with "and when you feel like you have mastered something...find the real master and start over". Josh, and Jacques have demonstrated my stepfather's advice perfectly here. Thank you gentlemen.

Josh's eyes as Jacques was talking with the knife. The benefits of growing up in a French home is you become very used to this sort of thing.
Getting a one-on-one 30 minute lesson in knife skills from Jacques Pepin is something we can all only dream about. Every time Chef Pepin opens his mouth, we learn something. And he handles this kid well, does not talk down to him...but it's very clear who is in charge here!
There are not enough hours for Jacques to teach all he knows. He is brilliant in the kitchen...
I never get tired of watching Jacques..so humble, excellent teacher, great technique.

I still remember a PBS show where JP states that if you keep your knives sharp, if you cut yourself it heals quickly (and ended with a sly smile). Tip: Silipat mats under the board are a great stabilizer. Such a great video. Nothing more inspiring than watching masters of their craft. JP's charm, gentle instruction, consummate skills shared generously with great humor has helped so many of us home chef's tackle anything in the kitchen intrepidly. Thank you for producing this wonderful video.---and the real plum....the Jaques Pepin Foundation to teach culinary and life skills to those in need....

I thought the kid did fine, he’s obviously doing the best he can and is handling getting schooled with grace.
83 vs probably 33 if I had to guess...50 years his senior I’d expect Jacques to have a few skills to teach him. I’ve been watching JP for 35 years...he’s one of the best right up there with Julia. Kid had a valuable opportunity to hang out and spend some time in the kitchen.
This shows the greatness of a true master. The man you are calling a kid is a test kitchen professional. Meaning he knows his stuff. He's very good. The fact that he was taught new techniques from Jacques, shows how great Jacques Pepin really is.
As well he should.
@@kenspence2802 Compared to Chef JP, he is still kid regardless of his accomplishments. Compared to a 60-year-old he’s a kid and the Chef is over 20 years older than that, and still working.

Although I have never met him, more than any one person in my twenty year career as a professional chef, Jacque Pepin taught me the most about basic skills and technique - the best chefs that I worked with were, at heart, teachers and mentors - Jacque embodies this spirit more than any !

I learned how to cook and how to use a knife about 25 years ago and in no small part from Chef Pepin. I used to record his shows starting with "Cooking Techniques" and I'd watch it over and over to pick up every technique. It's difficult to think of anything else that's improved our lives more than learning how to cook really well from scratch. What a lucky kid, to learn from not only a true master, but an international treasure.
The best knife-skills tutorial I’ve ever seen! How cool it is to watch such a seasoned expert - a real artist with food, and such a charmer too! The knife is an extension of his hand. Nice to know that I have been doing at least some of these techniques correctly - now I can refine the rest! Over the years I have bought any number of fancy chopping gadgets and one by one they have gone to charity shops etc., and I always end up turning to my knives and a chopping board. With the right technique, you can do absolutely anything with a good sharp knife. I’m just a humble home cook but I love to learn how to do things correctly.
I just love Jacques! He is so genuine... love watching Josh learning from this humble master.

I’m a first time viewer and new subscriber. I have always loved Chef Pepin. This video was so endearing and Josh was a great sport, and a class act, and knew just when to step back and let the master shine.

I see people dissing Josh, but I think that it's still his show and Jacques is still a guest. People will say "shut up punk and let the master talk," and I do think our host talks a lot, but Jacques' humility is always present, especially if/when he is on someone else's show. Again, Josh is talking a lot, especially when the man teaching everyone isn't on the show as much as the dude we see every episode, but Josh is helping to have structure in the show, because it's still his show.

Just started this video and I love one of the first moments. Josh shows how he was taught to hold a knife, and asks Jacques if that is how he does it? Jacques says, "Well, I don't know" then tests himself. "I guess I do." Love that! One of the definitions of mastery is when you do what you do so naturally you don't think about it and aren't really aware of how you do it - just what you are achieving. Think of driving. Its like that.
