I love how quickly this went from being a host with a guest, to a master chef showing off his skills and a guy with a big beaming smile in total admiration.
A wonderful thing about Jacques Pépin when he teaches, is that when the other person says "I do it this way," Jacques never says that it's no good. He recognizes that there is more than one way to do things.
He always diplomatic. It's impressive really. With that said, I really needed the host to either wet his towel more, or have the plastic thing that goes under the board so they don't move. I personally just use scraps of non-adhesive grip shelf liner. You can get it at any general merchandise retailer (Target, Walmart, etc.) in the kitchen section. Those work the best, IMO.
This kid starts off super confident and you just watch his face become more and more impressed until he finishes beautifully humble - the Jacques Pepin effect.

I always like Jacques because he seems like a regular person. He does not act like an arrogant celebrity chef even though his name is known worldwide. He has accomplished more than most men ever will, but he still just keeps everything simple and down to earth. He doesn't add pretentious flares to his food. He is always relatable to his audience, no matter what their skill level.

As a professional cook, I still haven't seen anyone with half the skills and techniques as Chef Jacques. It's just years and years and years and years of practice and repetition. I bet just about anyone will be trying to impress a legend if they could cook right next to him. But what a great video and for making it

Getting a one-on-one 30 minute lesson in knife skills from Jacques Pepin is something we can all only dream about. Every time Chef Pepin opens his mouth, we learn something. And he handles this kid well, does not talk down to him...but it's very clear who is in charge here!
Young guy keeps bringing up stuff he learned in culinary school and Jacques is like ”um, ya...sure?”. He has so much experience he has surpassed traditional technique and knows what works, especially for him. He has mastered his own technique.

Nice to know that I have been doing at least some of these techniques correctly - now I can refine the rest! Over the years I have bought any number of fancy chopping gadgets and one by one they have gone to charity shops etc., and I always end up turning to my knives and a chopping board. With the right technique, you can do absolutely anything with a good sharp knife. I’m just a humble home cook but I love to learn how to do things correctly.
I love this episode. The youngun was so confident and full of himself at the beginning. He eventually stopped, watched and tried to learn. Awesome.
Lol I think his eyes were also starting to water from the onions, I know mine always do 😂
I have watched Jacques and his daughter for so many years, what a wonderful guy..learned a lot too! thanks-
Jacques is *the man* -- absolute master.
We agree :)
Loved seeing these chef’s at work! Young and old so powerful! Loved hearing how long Jacque Pepin has been cooking. The food scraps use is so necessary. Thanks for the ideas.
I’m a first time viewer and new subscriber. I have always loved Chef Pepin. This video was so endearing and Josh was a great sport, and a class act, and knew just when to step back and let the master shine.
Hi Cali, welcome to our channel -- so glad you're enjoying our videos!
I've been chopping onions for 20 years and I still learned something new. What a great teacher!
A national treasure, no matter what nation you are from!
