A wonderful thing about Jacques Pépin when he teaches, is that when the other person says "I do it this way," Jacques never says that it's no good. He recognizes that there is more than one way to do things.

He always diplomatic. It's impressive really. With that said, I really needed the host to either wet his towel more, or have the plastic thing that goes under the board so they don't move. I personally just use scraps of non-adhesive grip shelf liner. You can get it at any general merchandise retailer (Target, Walmart, etc.) in the kitchen section. Those work the best, IMO.

I always like Jacques because he seems like a regular person. He does not act like an arrogant celebrity chef even though his name is known worldwide. He has accomplished more than most men ever will, but he still just keeps everything simple and down to earth. He doesn't add pretentious flares to his food. He is always relatable to his audience, no matter what their skill level.

I see people dissing Josh, but I think that it's still his show and Jacques is still a guest. People will say "shut up punk and let the master talk," and I do think our host talks a lot, but Jacques' humility is always present, especially if/when he is on someone else's show. Again, Josh is talking a lot, especially when the man teaching everyone isn't on the show as much as the dude we see every episode, but Josh is helping to have structure in the show, because it's still his show.

Chef Jacques is a masterful, teacher. He's extremely detailed in his teaching which taught me how to navigate my way in the kitchen. Since I can't have you personally in my kitchen, I definitely have a quick reference guide via RUclips right at my fingertips. Thanks to the host for presenting this video with us it's greatly appreciated. I appreciate all your teachings Chef Jacques. Thanks for your graciousness.🙏🏻

I find it amazing that Jacques Pépin is such a master, yet so humble, humorous, and relaxed as he teaches. Besides watching him to learn, I watch him to chill when I'm stressed out. Finger cuts are no fun, and take time to heal, and after dinging myself a few times, which since I'm a piano player is even less fun, I came across another Jacques Pépin video explaining basic knife skills, and (knock wood) I haven't cut myself since. Merci beaucoup, Monsieur Pépin!

I love how respectful Josh was. He’s leading into each section, as that’s his job - and he’s setting the context (ie what the technique is called at culinary school, and why they are taught it) - but then every time, is asking Pepin how he would do it, and any other hints or tips - then he’s watching, listening and smiling, as he knows this guy is the master. A terrific clip. I’m going to save and return to this over and over....

Not just a couple knife hacks...
This video covers so much to do with cooking by probably the most technically accomplished chef I’ve ever seen. (He peels the tomatoes for his wife... “If I’m making this for my wife, then I would peel the tomato... “
😆😄) ...The breadth of information about garlic alone makes this a worthy video! “I started when I was 13... it took a solid year before I could go to the stove... a year of peeling, scaling (fish), plucking the chicken, all that type of thing... feeding the dog.... The chef called me ‘you’ for a year and the day he called me Jacques he said tomorrow you can start at the stove. ...
I started in 1949 so 70 years now...”
This exceptional video is well beyond knife skills. And includes plenty of chuckles!

The best knife-skills tutorial I’ve ever seen! How cool it is to watch such a seasoned expert - a real artist with food, and such a charmer too! The knife is an extension of his hand. Nice to know that I have been doing at least some of these techniques correctly - now I can refine the rest! Over the years I have bought any number of fancy chopping gadgets and one by one they have gone to charity shops etc., and I always end up turning to my knives and a chopping board. With the right technique, you can do absolutely anything with a good sharp knife. I’m just a humble home cook but I love to learn how to do things correctly.
