- This recipe is the easiest soufflé you'll meet. It comes from Jacques Pépin's maman (which just means "mom" in French) and unlike traditional French soufflés that call for separating the eggs, this recipe has you beat the eggs straight into the sauce. INGREDIENTS
6 tablespoons unsalted butter, plus additional to butter a 5- to 6-cup gratin dish
1/4 cup finely grated Parmesan cheese
6 tablespoons all-purpose flour
2 cups whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
5 extra-large eggs (or 6 large ones)
2 1/2 cups grated Swiss cheese, preferably Gruyère (about 6 ounces), plus three more optional slices for garnish (roughly 2-inch by 3-inch)
3 tablespoons minced chives

My husband, when he was alive, really loved Jacques Pepin. He made many of Pepin's recipes and would be so thrilled whenever he saw him on TV. He would sit with pen and paper to take notes and didn't want to be disturbed. After, it was all he talked about until he got to make the dish.

Presenter was great as well. Although her part was naturally limited, she asked good questions and intervened only when necessary.
Compare that to the other guy who felt the need to point out that he went to culinary school as many times as possible
Just the one comment about breaking eggs on a flat surface so as not to introduce bacteria into the egg. I got sick last week (very rare for me), and I think it was from breaking eggs that way! Well now I know!
Kristen made the presentation very pleasing and interesting. She let Jacques carry the conversation at his pace, rather melded with his talk making it very memorable. She blended with everything was relaxed and not loud and obtrusive. A presentation to remember and along with the recepie.

She also has a very nice understated manner and a charming voice and tone, never overcrowding the master. Well done! (PS Much as I like Claudine, can't say the same things about her, even if she is his daughter. That's one thing I didn't appreciate about the series JP did with her. That contrast didn't work for me.)

I like his quietness, gentle narrative, bits of fun, confidence, total command of his craft - HIS QUIETNESS. Celebrity chefs generally annoy me with their ego, noise, rushing about like a wet hen. This man doesn't have to perform, just does his peaceful, clever thing, with lovely results.
I enjoyed Kristen's absolute enjoyment of every moment with THE chef!

i remember watching him teach his daughter to cook on the PBS series they did together, but nothing will ever top him cooking with Julia Child. my mom and i used to look forward to watching them together every weekend.

I used to watch Jacques and Julia all the time when I was young. Other kids were watching cartoons and I was watching cooking shows. The thing I love about his style of cooking is that he makes fancy, luxurious, food simple.🍷

I love this man! He and Julia Child are THE cooks to beat all cooks. They have made more of an impact on home and professional cooking than any other culinary artist. "Simple is best." There is a RUclips video of him with an audience, deboning a chicken to make a gallantine, and he makes it look effortless. Other well-known chefs in the audience were in awe of him. He is a world treasure.
His omelette video is my favorite of all omelette videos. Mr. Pepin must be protected at all costs! 💝💝💝

I have watched so many cooking shows featuring Jacques. I just love his way of cooking. He can go rustic to 5 star and it's never a big deal to him and always has a sense of humor. I just enjoy him immensely. He reminds me of my grandfather. A great teacher.
le souffle au fromage!!! the cheese souffle of our moms or grandmothers!!as a French, I remember my grandmother cooking that when I was a child..but I had to be at the table on time!! because if you wait too long, the souffle could collapse!! .it's also a good idea to put some nutmeg in your béchamel sauce...I can smell it just like if it was yesterday...Monsieur Pepin MERCI BEAUCOUP!!

My granny made us the same chicken stock with vermicelli noodles and she fed 6 kids in less than 10 minutes. We ate it with plenty of bread to dip in it. For afters we had homemade custard with a spoon of jam in it. Everything we ate was made from scratch. No supermarkets or ready meals in those days.

I have been watching Jacques since I was 12...I am 49 now....sometimes I just have his programs on in background while working at home because his voice is so calming.....LOVE all the dishes. Simple, elegant and not fussy. C'est Formidable!!!!!

This is by far and away the best way to cook eggs! I've had (and made) eggs every which way, and this is the one that my children clammer for again and again. The techniques are so basic and I use them everywhere! Sauces from roux, tempering eggs, eggs as a leavener in a bake, buttering the dish... I never knew souffles were this easy! Thank you @Food52 for publishing this gem!
