Curry Flavoured Quinoa Bowl (Plant-Based) 🥘 Blending Traditional Indian and South American Cuisine

- Today, quinoa from South America and Asian curry are both rising in popularity globally and it was inevitable that these two ingredients would blend for something spectacular, and perhaps a new tradition.
I’ll be sharing a curry-flavored quinoa bowl that you can have for lunch or dinner! The curry and quinoa will be enhanced with roasted almond and pine nuts, and the usual mix of onion, garlic, turmeric, coriander, and other herbs and spices will be tempered with sweet raisins.
Best of all, this filling dish is completely vegan, nutrient-dense, and will provide you with plant-based proteins and healthy fats!

▶️ INGREDIENTS for Quinoa Recipes: (2 to 3 servings)
1 cup/190g Quinoa (soaked for about 30 minutes)
2 to 3 Tbsp Olive oil
1 cup / 140g Onion
1 Tbsp Garlic - finely chopped (3 to 4 garlic cloves)
1/2 Tsp Turmeric
1/2 Tsp Ground Cumin
1/2 Tsp Ground Coriander
1/4 Tsp Cayenne Pepper (Optional)
Salt to taste (I have added total 1 teaspoon of pink Himalayan salt)
1 cup / 140g Carrots
1/2 cup / 70g Frozen Green Peas (If you are using Raw Peas then add it along with the carrots)
1+ 1/4 cup / 300ml Water (If you like your quinoa cooked a bit soft then add 1+1/4 cup / 300ml of water)
✅👉 (NOTE - Sometimes one batch of Quinoa is dried than the other so may require more water to cook. SO ADJUST ACCORDINGLY)
Garnish:
1/4 cup / 35g Almonds (Toasted)
1/4 cup / 35g Pine nut (toasted) or nuts/seeds of choice
1/4 cup /35g Raisins - very finely chopped
1/3 cup / 15g Parsley
Lemon juice to taste (I have added 1 tablespoon)
Drizzle of Olive Oil (Optional) - use a good quality olive oil, I have added organic cold pressed Olive oil
▶️ METHOD:
Start by thoroughly washing the quinoa until the water runs clear and then let it soak in water for about 30 minutes.
Dry roast the chopped almonds for about 2 to 3 minutes on medium heat and then add pine nuts and roast for another 1 to 2 minutes. Remove from the pan and set aside for later.
Wipe the pan clean and add cooking oil, onion and 1/4 teaspoon salt. Adding salt to onion will release it's moisture and help it cook faster so please don’t skip it. Fry the onion on medium-high heat until it just starts to caramelize.
Once the onion has started, reduce the heat to medium or low (depending on the heat of your stove). Add the finely chopped garlic and continue to fry for a minute or until fragrant. Then add spices (Turmeric, Ground Cumin, Ground Coriander, Cayenne Pepper) and mix well. Right away add the carrots, soaked quinoa, salt and water to the pan. Bring the water to a rapid simmer and then reduce the heat to low and cook it covered for about 20 to 25 minutes. (It took me 20 minutes to cook the quinoa on my stove).
Uncover and add the frozen peas and turn off the heat. Mix well. Please note, if you are using fresh uncooked peas then add it to the pan along with the carrots.
Add the parsley, raisins, lemon juice and drizzle of olive oil to finish. Check for seasoning and add salt if needed. Ready to serve. This can be eaten both warm and cold.
▶️ IMPORTANT TIPS:
👉 Thoroughly wash the quinoa, this will get rid of any impurities/gunk/bitterness and will give a cleaner taste to the quinoa
👉 Adding salt to onion will release it's moisture and will help it cook faster so please don’t skip it
👉 If you are using RAW Peas then add it to the pan along with the carrots
👉 Turn the heat to medium-low to low before adding the garlic and spices. This will prevent them from burning
✅👉 Sometimes one batch of quinoa is dried than the other so may require more liquid to cook. SO ADJUST THE WATER QUANTITY ACCORDINGLY

I am an unconditional fan of Quinoa and I'll definitely try your recipe, it looks so delicious... however there is a point I want to check with you: the ratio to cook quinoa it's 1 cup quinoa for 2 cup, and here you add only 1 cup of water, how come it can be cook enough when the water will be quickly absorbed?

1 cup water because we are soaking the quinoa here, which absorbs some water as well. The idea is to add less water and steaming it for longer on very low heat.

I tried this and it came out fantastic. You can change up the spice if you like with Italian seasoning, garlic ginger powder, cayenne pepper etc.
don’t forget to squeeze lemon at the end and add parsley chopped up or cilantro. Either is fine

I think you forgot to add curry🤔 because the title said Curry flavoured quinoa
It states curry flavoured. 'Curry' is just a 'gravy' or 'sauce' containing spices. They clearly used spices in this dish which will give it a 'curry flavour'. Just to note the 'curry' in this dish has been soaked up by the quinoa.

Unfortunately, pine nuts are now going for $25/lb so I would omit them when I make this recipe. I would also substitute veggie broth for the water in the final cooking. Being at high altitude, I would use more then 1 cup of broth to prevent burning. I would also be extremely careful in cooking the garlic, when I do Chinese cooking I limit it to 10-15 seconds to prevent burning before adding something else. Overall, I think this is is a really good recipe where you can add or subtract ingredients as desired. I might even try serving it with or mixing it with basmati rice at least once. Being non-vegan, I would also be tempted to use ghee instead of olive oil. I’m looking forward to trying this because I’m only currently using quinoa for breakfast cooked with an equal amount of oatmeal. I tried being vegan for a while but it took me three times as much work to make anything. I also refuse to use a food processor, a vegan hallmark.

As a vegan I've struggled to find vegan recipes that do not rely on tree nuts. I'm allergic to them to the point of death (anaphylaxis shock).

Is there another nut you would recommend in place of the pine nuts? Those are quite expensive
You could skip the pine nuts and use just almonds or add any nuts/seeds of your choice.
This looks lovely. I'm going to try this tomorrow, but I will most likely add some celery [as I love celery] along with the carrot and sauté them for a few minutes before adding the quinoa and water.

How did the frozen peas cook when you added after turning off the heat
Frozen peas are flash-steamed before they're frozen, so they're already ready to eat, you just want to warm them very quickly so they maintain their slight bounce and bright color.

Could you use curry powder?
Your recipe was the first time I have cooked or eaten quinoa. I rinsed but didn't soak the quinoa for thirty minutes . I very much liked the flavors however the grain did not expand but stayed very small. Is that typical for quinoa?

@@FoodImpromptu well I made it today, I didn’t have The coriander and I didn’t have the parsley but everything else I had. I am still having a very difficult time with my taste buds ever since I got sick in March. I don’t know when my sense of taste will come back but my husband said he loved it it did taste savory but I cannot distinctly taste flavors. I will continue making this healthy dish because it pairs is well with salads and beans and so many other dishes thank you so much.
