This video was such a great help! The first time I had quinoa, it was tricolor quinoa. I thought the texture was weird from how much of a bite it had to it, and I’ve been cautious of trying quinoa ever since then. Definitely gonna be making some white quinoa and trying it out later again. Thanks!
I'm jealous of folks who don't taste the slightly bitter, soapy taste! Quinoa has saponins that cause that taste. I rinse the quinoa in a bowl, stirring it around for a couple of minutes, transfer it to a strainer, rinse and drain. Then I toast the quinoa in the pot I will cook it in till all the water is gone and I start to hear it pop. Takes about 8-10 minutes. Then I add the water - warm for quinoa as opposed to other grains and cook. Most reference say a standard 2 parts water to one part grain, but that makes it turn out mushy for me. So I do 1 1/2 parts water to 1 part grain. The extra time is worth it - to me, others may not need or want any of this fuss.

I have a mortar and pestle and will have to do some experimenting! I could make quinoa meal from cracked quinoa! I did the same with rice and a grinder for kiddo since rice cereal was expensive. He didn't care for it as much as congee made the same way(I really don't get him sometimes...) But I liked it well enough i made it like chocolate malt o' meal for me and hubby since that's his favorite dish. It's a little too much effort and noise for me to grind rice right now, but I think I can hack it by getting a bow of instant and using the mortar and pestle. If not, the slightly larger grains might be a nice texture difference! Kiddo' s old enough for the chocolate version now, so it'll be an enjoyable learning experience for him! I had a failed popped quinoa experiment (the white in my trio bag was hulled! Fiends! ) but the resulting mess is still tasty, and i'm considering buying the colored variety specifically for popping. If you have few options available in your area, it's something to keep in mind. I'm now curious about a a flour mill for home use... I would love to be able to make my own rice flour and am curious about quinoa flour now! I'm not gluten free, but have a desire to learn about alternative flours, as I know many who are. I have never seen quinoa flour in store , even as their selection is getting a little better. Being able to make my own as I need it would be a great convenience!
Thank you for the information. I’ve changed my diet by eliminating all bread, pastas, sugar….basically all proceeded foods and I’m eating more quinoa because it’s more of a healthier carb and I don’t want a complete keto diet…a low carb healthy diet.

Sounds great! Maybe even a little maple syrup, vanilla on the top after cooked. I use coconut oil when roasting out my quinoa to dry out after rinsing or soaking! Thank you!

I bought red quinoa but when I put it in the water it became slimy and looked like fish eggs. I went ahead and cooked it but it still came out slimy. Anyone has had this experience? Cause I do not want to eat it.

I soak and rinse it. Then I cook it with 1 tsp ground cardamom. It masks that odd taste for me but is not overwhelming ly tasting of cardamom.
