I've made about a dozen recipes from this channel now, for my parents (that are vegetarian)...and I find it amazing how the drizzle of olive oil and squeeze of lemon at the end, bring the whole dish together. I've made the rice/lentils/zucchini/spinach dish a few times now, and the lemon/oil combo actually raises the flavor profile greatly.

I am drawn into your recipes because they are user friendly, and prep is pretty easy. Ingredients are accessible, economically friendly and healthy all of which I'm in need of. Also, the recipes can be tweaked for taste and preference as well. Now all I need is your serene and pretty kitchen and I'm good to go :) PS. I just found your channel. I love this recipe and am going to have to try it. The one thing I’m going to have to change is the cilantro. I’m one of those people who taste soap when I eat cilantro so I think I’ll substitute parsley.
brown rice takes longer than quinoa to cook and water proportions differ...that being said, if you're familiar with cooking brown rice, adjust as you would...if novice, cook the brown rice separately and follow the recipe (although you may cut back on the broth...unless you prefer a more soupy dish).
I'm a single fellow and I often make recipes in bulk to freeze later in jars or other containers, and this definitely looks freezer-friendly and quite hearty for my long shifts at work! (Get your annual flu shots, everyone!
Hi planning on making this soon , your black beans don’t look like what I can get here in Australia they look more like kidney beans (colour wise) are both black or kidney beans ok for this recipe ?
Your videos are beautiful. The music is great. I think you should use something other than plastic to stir so not to transfer any of the unwanted things in plastic, into your nutrition food.
Hi Will! So glad you enjoyed the video. 😊 I understand your concern. I usually use wooden and steel spatulas at home but for the videos I use silicone spatula it’s less noisy.
No way would i add cilantro, that will not go well with this dsh, maybe parsley would be best. And lime would not be good , it would make it sour. I made something very similar to this before, i added shredded chedder cheese , cumin , papkira and stuffed it in bell peppers and put it in the oven. Then i added plain greek yogurt and avocado on the top , its one of my absolute favorite dish
Nothing against you or your video, but note that each kg of quinoa you buy for your ethical dishes, a poor family in Peru or Bolivia can't afford the cheapest source of protein over there. BTW, campesinos must sell the highest quality for the first world consumer and they are left to buy the poorest at the same price you'd probably pay for yours...
