  • When I tried this Quinoa Salad, everyone Loved it (even those who don’t typically like quinoa). We loaded quinoa with colorful veggies, nuts and flavor. It’s hard not to love this easy quinoa salad with homemade dressing. Let’s check the recipe.
    Recipe:
    Ingredients
    For Salad:
    1/2 Cup Quinoa
    1 medium Onion (1/2 cup chopped onion)
    1 medium Green Capsicum (1/2 cup chopped Green Capsicum)
    1 medium Red Capsicum (1/2 cup chopped Red Capsicum)
    1 Carrot (1/2 cup diced Carrot)
    1 cup Broccoli Crowns
    1 cup chopped Cabbage (any color of cabbage which is easily available)
    Some chopped Cilantros
    Few Mint leaves
    Few Raisins
    Few roasted Peanut (You can add your choice of nuts as well)
    Salt
    Black Pepper
    1 tsp Olive Oil
    For Dressing
    1/2 Lemon
    1/2 tsp grated Ginger
    1/2 tsp minced Garlic
    1/2 tsp Salt
    1 tsp Red Chili Flakes
    1 tsp Honey
    1/2 tsp Soy Sauce
    1/2 tsp Black Pepper
    1 and 1/2 tsp Olive Oil
    Method:
    To make quinoa salad, you’ll want to cook your quinoa first. Let’s take a pan on a low flame, add Quinoa and roast for few mins till it starts cracking sound. Switch off the gas and let this cool. Now rinse the Quinoa under water. Then, add the rinsed quinoa to a pan and add water (I use 2 parts water to 1 part quinoa to cook it) on a low flame, add salt and bring this to boil. Now cover the pan with lid and cook for about 10-12 mins. Quinoa is ready, transfer in a bowl and allow it to cool a bit.
    While the quinoa cools, prepare the rest of the salad. Let’s prepare dressing for salad.
    Squeeze lemon in a cup, add grated ginger, minced garlic, red chili flakes, soy sauce, olive oil, salt, black pepper and honey. Whisk everything together. Dressing is ready, keep aside.
    Let’s prepare colorful veggies for Salad.
    Heat pan on a medium flame, add olive oil. Add chopped Onion, sauté for few seconds, now add all the veggies except cabbage and sauté just for 1 mins. (I personally prefer to use sauté veggies in Salad which is easy to digest and it enhance the flavor of veggies). Add some crushed black pepper and switch off the gas. Now add cabbage and mix everything together (after adding cabbage don’t sauté for long time just mix is needed) and transfer in a bowl.
    Now its time to assemble the Salad…
    In a bowl take cooked Quinoa, add sauté veggies, chopped cilantro, crushed mint, raisins, roasted peanut, dressing. Mix everything together. Easy! Enjoy healthy and tasty Quinoa Salad..
