  • These healthy wraps recipe are packed with protein, fiber & amazing flavors, makes the perfect lunch or dinner!Flavorful, delicious and satisfying, they are stuffed with crunchy veggies, tangy sauce/chutney and Quinoa Patty.
    Serving
    4-5 Wraps
    Ingredients
    Paratha (Crispy Tortilla)
    1 cup Maida (all purpose flour)
    1 cup Wheat flour
    1/2 tsp Salt
    2 tbsp Oil
    Water
    Crunchy veggie filling
    1 Onion (sliced)
    1 Bell Pepper (sliced)
    1/4 tsp Salt
    1/2 tsp Red Chili powder
    1/2 tsp Chaat Masala
    Quinoa Patty
    1/2 cup Quinoa
    2 boiled Potato
    1 Onion (finely chopped)
    1 small Carrot (finely chopped/grated)
    1 inch Ginger (grated)
    2-3 Green Chili (adjust as per spice level)
    Some Cilantro leaves (chopped)
    1/2 tsp Salt (or to taste)
    1/2 tsp Garam Masala
    1 tsp Red Chili Powder
    1 tsp Cumin Powder
    1 tsp Chaat Masala
    1 cup Water
    To assemble Wrap
    Paratha
    Quinoa Patty
    Crunchy Veggie filling
    1 Tomato (chopped)

    Tomato Ketchup
    Chipotle Sauce
    Lemon
    Chaat Masala
    Cilantro
    Method:
    Dough Preparation:
    1. Take all purpose flour and wheat flour in a bowl.
    2. Add salt, oil and mix everything all together.
    3. Add water little by little to make a soft dough. Dough should not be too tight or too soft.
    4. Knead the dough for ~2-3 mins, drizzle some oil at the end and knead the dough again for ~1 min.
    5. Cover the dough with wet cloth and rest it for ~20-30 mins.
    Quinoa Patty Preparation
    1. In a bowl take rinsed Quinoa, add water and let this bring to boil.
    2. Cover the pan with lid for about 12-15 mins on a low flame.
    3. Once Quinoa is cooked, let this cool for about 5 mins.
    4. Take boiled potatoes in a big bowl.
    5. Mash the potatoes, there should be no lump.
    6. Now add cooked quinoa, chopped onions, carrot, ginger, green chili, cilantro and all the spices.
    7. Mix everything together with gentle hand.
    8. Take some oil in a hand before making the pattie from the dough, so that dough will not stick with your hand.
    9. Take the portion of Pattie dough and start making the patties as your desired shape.
    10. Take 2-3 tbsp Oil in a medium hot pan for shallow fry.
    11. Place the pattys and let this fry for sometime till it turns light golden.
    12. Drizzle some oil in between if needed.
    13. Turn over the pattys and fry till it turns light golden.
    14. Adjust the flame from medium to low in between the frying process if you feel the pan is too hot.
    15. Turn the pattys 2-3 times till it turns golden and crispy.
    16. Take out the pattys in a plate.
    Veggie Preparation:
    1. Take sliced onion and bell pepper in a bowl.
    2. Add salt, red chili powder, chaat masala.
    3. Combine all the ingredients very well and keep aside.
    Paratha(Crispy Tortilla) Preparation
    1. Remove the wet towel and knead the dough for ~1 min to make the smooth dough before start making the balls.
    2. Take portion of dough and make the ball.
    3. Sprinkle some flour and start rolling the paratha, try to make slightly thin.
    4. Apply some clarified butter(ghee) and sprinkle some flour.
    5. Fold in zig zag, roll in spiral and tuck it from the inside.
    6. Now again dust some flour and roll the paratha slightly thick.
    7. Cook Paratha on a medium hot tawa.
    8. Apply some clarified butter on both the side and cook till it turns golden and crisp.
    Let’s assemble the Quinoa Wrap:
    1. Place paratha in a plate.
    2. Apply some Green Chutney.
    3. Place prepared Quinoa Patty.
    4. Add some prepared onion, bell pepper filling.
    5. Add some chopped tomato
    6. Sprinkle some chaat masala.
    7. Add some more green chutney, some tomato ketchup and chipotle sauce.
    8. Squeeze some fresh lemon juice and chopped cilantro.
    9. Fold and ready to eat.
    Tips:
    1. You can only use the whole wheat flour to make Paratha.
    2. Add salt in onion and bell pepper filling before assembling the wrap, it will not loose the water.
    3. Add some chopped green chili or Jalapeño in the wrap if you like hot spicy wrap.

      You can completely use whole wheat flour as I mentioned in the description.
