Thank you for all your videos. When I went to Paris (Japan is a bit far…)it really helped me selecting some of the Michelin restaurants. I really liked Maison Rostang and Meurice. Great job again.

It's not the expensive ingredients but the crazy number of combination of flavors that most impressed me. It takes a lot of brains to create something simple delicate and flavorful and not done to death (to impress the uninitiated). Traditionally the chef writes the menu in calligraphy. Japanese food is known for being less spicy and less oily than other cuisines so some of it may seem too bland. The buckwheat walnut sponge cake was unusual but I can see why it works with the fruit and caramel sauce. Also, adding mitsuba to the rice with roe instead of shiso was inspiring, much more subtle. My favorite was the Cured Karasumi with cuttlefish(calamari), and yes, both ingredients are also used in Italian cuisine. I think this is the best Kaiseki video I've seen on YT.

Amazing cuisine and pure class . A private room ? That’s incredible. The quintessence of luxury . Amazing dish and the ingredients look like little precious . Wonderful atmosphere . I think that’s one of the best place in terms of class and appeal . Great video as always

      And a private restroom.
Kikunoi is not a ripoff, and its regular price is less the half of this. A half of the price of the course of this video comes from just a one dish, which is winter Kyoto crab (called Taiza crab). Otherwise, Kikunoi’s charge is usually $300~, which I consider “quite” reasonable for the quality, service, etc.

This placed is surrounded by cemetery and the restaurant is famous and proud of using its underground water for cooking due historical reasons. It’s published on their website. Do you really know what it means? It means they serve everything with water from cemeteries ground! A lot people just got high with star rating but ignored Google map.

Haven’t been to many Japanese restaurants but this is certainly better than any presentation I’ve received. Also for a restaurant doing strictly traditional style, you’re not supposed to present it any other was than the classical way whether that’s artistic looking or not.
