  • This mochi is chewy and jelly-like, which is quite different from your regular rice mochi. It is typically made with warabi starch, but since it's hard to find, potato starch works just as well.

    Recipe
    1 cup potato starch
    1/2 cup white sugar
    Roasted soybean powder
    Brown sugar syrup (I used maple syrup)
    Combine potato starch, sugar and 2 cups water in a pot
    Cook over medium heat, stirring constantly
    Once mixture is solid, keep mixing until everything is translucent
    Coat container with roasted soybean powder
    Add mochi and coat with more powder
    Push mochi into a sheet 1-2 cm thick
    Let cool and cut into cubes
    Top with more powder and syrup
    eat when fresh! they will harden quite quickly in the fridge
