My salsa recipe | preserving the tomato harvest

  • I’m sharing how I can my salsa today. This is just the start of tomato harvest and preserving. I’ll be sharing more in the weeks to come. Thank you for spending time with me today and I hope y’all have a blessed day!🤗
    Salsa
    This makes 20 pints
    28 cups diced tomatoes
    2 large red bell peppers
    6 large green bell peppers
    6 jalapeños or to taste
    3 large onions
    3 bunches of cilantro
    1/2 cup chopped garlic
    2 tbsp hot sauce
    2 tsp Worcestershire sauce
    1/2 cup sugar
    4 cups lemon juice
    4 tbsp oregano
    4 tbsp salt
    2 tbsp black pepper
    8 tbsp cumin
    2 tbsp coriander
    4 tbsp smoked paprika
    18 oz tomato paste
    Dice all the vegetables, add to a large stainless steel pot and simmer for 10-15 minutes. While simmering add seasonings to taste. Fill your prepared jars to 1/2 inch headspace and water bath for 15 minutes.
