Just finished mixing up all the ingredients and I'm tasting it. It does taste sweet! Didnt expect the recipe to call for sugar and vinegar!! Made a half recipe even though i blanched all the tomatoes, because I'm not confident in myself yet lol. This will be my first time canning anything ever. Gotta figure out what to put in my pot as i dont have a rack. Thank you soo much for this video and recipe and we'll see how it goes!!!!
It'll be spring or so before I can do this -- but next winter I'll have salsa to give as Christmas presents to my church family and a few put back for me.
Thank you for showing that you are able to can fresh salsa without cooking it! I like my salsa chunky, and not like stewed tomatoes with some additives. I can’t believe so ,any cook their salsa so. Icy before cooking it again in the canner!

That is a great recipe Amy, thank-you. Most recipes call for cooking the salsa and adding vinegar or bottled lemon juice. I see though that you have been successfully canning your salsa without any of that.
I hope she added lemon juice or vinegar, because that is crucial for keeping the pH down (high acidity) to prevent botulism. Some varieties of tomatoes are acidic enough, but unless you test the pH yourself after mixing everything you can't be 100% sure. Outbreaks are rare, but you seriously don't want to play around when it comes to botulism. In most cases, you can't rely on a simple "sniff test" to determine if botulism toxin is present. The infection is far more sinister than other food borne illness like E. Coli or Salmonella-you have a 40-50% chance of death if you don't seek treatment. Even with treatment, you could be on a ventilator for 2-8 weeks. Almost every outbreak results from improperly home-canned foods.

This recipe looks awesome...when removing tomato skins...plung them immediately into cold water after the hot water bath and the skins will fall off easily..no burned fingers....

Well Amy I tried your way and I used Roma tomatoes (since they are a little firmer)… and it came out mush instead of nice chunks like yours did!!!😩What the heck am I doing wrong? Did I maybe scald them too long?
Maybe so. Although I've never used Roma tomatoes to make salsa, I scald them just long enough that the peelings will come off nicely. It doesn't take long at all.

Reminds me of our house when I was growing up. We'd can all sorts of veggies and fruits. Jelly and jams, once even sausage! Then we got a freezer and started freezing things too. We cut corn off the cob and canned some and froze some. We had corn everywhere! But it sure tasted good! That salsa looked so yummy now I'm hungry! See you next time. God bless 🙏 i

That answer is not exactly correct. It depends on your recipe. My recipe calls for lemon juice and you can use vinegar but the ratio is different and I don't understand it so I'm just going to use the lemon juice.
Love the video and was trying to find one about not cooking salsa. I keep hearing that you have to make sure you have the right acidity and do you heat your jars before you put in the water bath?

Amy, I only planted 2 big boy tomato plants, but I am only getting 3-4 ripe at a time. My farm lady neighbor suggested coring and freezing them and when they thaw they’ll peel easy then I could make smaller batches of salsa. What would your suggestion be for making only a half dozen pint jars?

If you cut an x in the bottom of the tomato before parboiling them then they are very easy to peel.
The chopper really makes it easy but where's the hot peppers no salsa mix for me I use cumin yours looks very good I just needed a refresh on canning thank you so much

As long as the jars are sealed well, they can be kept for a year or two.
