I enjoy your channel so much. Your family projects are so helpful to watch. It is just my husband(age 69), and me(age 68), but we enjoy canning so much. He is so helpful and I could not do it without him, but together we get it done. This week we canned 8 half pints of pizza sauce, 9 quarts and 5 pints of tomato juice. 17 pints of salsa, 14 quarts of potatoes and 14 quarts of french fries. I guess you have to love it to enjoy it. You and your family are so inspirational and peaceful to watch. Thank you.
I canned 32 quarts of pickled pepper cabbage after watching your video several times! Guilty of absolutely loving this as my grandmother always made this for my German grandfather, and I don't understand why I wasn't regularly canning this delicious side. She served a small bit on all of us kids plates with dinner and supper. I walk backwards in time listening to you gently explain your methods and ingredients, because you help me to understand what I had been too young to know I should of paid better attention when she told me so many of her methods. You do a wonderful job. I had to turn the volume up to listen to your son say he didn't think the dog had a wonderful mother like he did who made [salsa] hahaha. Oh what a little sweetheart…making his momma a “flower girl” from her flowers! A memory/video to keep ~ especially as he gets older! Love boys who enjoy being with and working for with their Mommas! I am a Daddy’s/Grandpa’s girl (more so my Mom too now I’m a woman)…but…It’s beautiful to see Mothers and sons together, as it teaches them how to treat girls/women and others as they grow up…especially if they get married! Obviously, the same goes for girls! I roast my tomatoes for both flavor and the skins literally roll off. Then I take the pan juices and the skins and pulverize them into a thicker juice. I use this for the salsa, in tomato jam, tomato sauce, or whatever I'm making. The skins and seeds contain flavor and nutrition, therefore I leave the seeds in so there's no waste. I never notice the seeds when I eat it, anyway.
I don’t have a garden, I don’t do canning, and the extent of my preserving is freezing bought produce and making the odd jar of something (not using either water bath or pressure canning methods)…yet I really enjoy watching you doing all this stuff for your homestead! I also love the fact that your kids get so involved. I get that it can be such hard work for you but they are picking up some amazing skills, and when they look back they will know just how fortunate they were to have this kind of background, rather than one where everything came solely from a supermarket shelf (I now know how lucky I was to have a mother who knew how to feed a family, even if I didn’t always appreciate it at the time.)

Ok I did this! Here’s what I did. We were blessed with overachieving tomato and bell pepper plants. I used a chopper like you have as well. I did take a spatula and kind of squash them to get more liquid out. I ended up with a quart of tomato juice btw for whatever later. I got about 15 well drained tomato cups, 3 cups HG coarsely chopped onion, 3 big cloves of HG garlic chopped fine, and I increased bell to 1.5 cups chopped. I used one HG red jap and one HG green jalapeño, finely chopped. 2tsp cumin 1Tbsp Chili powder abd 3 Tbsp kosher salt the ACV etc everything but what I stated was as directed. I added 2Tbsp sugar because im accustomed to store bought but if you aren’t then blow off sugar or decrease. Boiled around 45” burned the bottom but it didn’t hurt it one bit (don’t ever scrape burnt part). Was exhausted so left it overnight to meld. Heated today and water bathed. Before I waterbathed I put a tad bit in fridge. It is EXCELLENT. I would literally search to repurchase in store. The peels and seeds didn’t bother us one iota. Our turned out between mild and medium heat(hubby doesn’t like heat). It made 5 pints exactly and was the consistency sort of like pace or other store bought. Thick and also thin creamy and also chunky and not chunky so all different but worked out so well. Perfect. I cannot thank you enough! Btw my tomatoes were a mixture of whatever grew some red some orange but all were ripe and some a bit overripe. Took only big cores abd bad parts out. Why work harder? Edit:Next time I will add one more cup of bell abd one more cup onion and one more small jalapeño as well as reduce sugar to 1 Tbsp. Sorry so long but I’m trying to help others.

So a year later, I’m watching your video and having the same panic attack about my tomatoes. We had a really hard late frost with temps down into the upper 20’s at the end of may and first of June. My husband and I had to run out every evening and throw stare on top of as much as we could and saved most of the tomatoes and green beans but I do believe it caused everything to be delayed. The looked terrible but came back like a shinning star so I have high hopes for the tomatoes, it’s just nerve wracking!

Excellent. I never understand removing seeds in Zucchini or tomatoes. Then there are jars of FIBER you can buy. Why? Eat your fruits and veggies, as is. No peeling. This is what I do. Good job, Mrs. Zimmerman. I am on a salsa kick, so this is perfect. Thank you.

But we canned, and canned, and canned things….learning right beside mom, just like your kids are doing. I appreciate ALL of the work you do in making the videos. But NOW, Girlllllll, you need a nap. just wanted to add a little note that you probably already know. We live in an area with hard water. I put 4 tbsp of vinegar in my canner and it limits the calcium on the outside of the jars.
RuthAnn I love your channel more than you will ever know. I didn't know yellow tomatoes were low acid. I have canned 51 quarts and 122 pints of YOUR pasta sauce, 9 pints of diced, 25 various sizes of "green" relish and 30 pint V-8 juice all after a devastating hailstorm the end of June. (I am still canning as they ripen in our basement)‐As I watched you drain the tomatoes for your relish, I wanted to share the Lord whispered into my inexperienced ear to make the juice off my preciously canned tomatoes into V-8 juice!! ❤ I took some V-8 juice to our little church for snack/fellowship time and everyone LOVED IT! I feel so blessed to have the Holy Spirit whispering into my inexperienced ear and you on RUclips! GOD IS GOOD!!

Used 6x28 oz cans of diced tomatoes because of hail storms and 100+ heat, my tomato plants Haven’t been producing. My yield was 9 pints. My sampling while it was simmering indicates a great tasting salsa. Thank you

In the past I lived in Lancaster county in Pennsylvania and if I had a question on any aspect of homesteading, I would seek out the mentoring from my Mennonite/Amish brothers and sisters. They are the salt of the earth. I learned a lot and I'm a better person for my interaction with this community. Thank you and I subscribed and hit (smashed) the "thumbs up" button. We are programed to use vinegar 5% or higher for proper shelf life. With My salsa (pico de gallo (red-tomato) or salsa verde (green/yellow-tomatillo,) I use lemon or lime juice for a bright flavor that doesn't bite the tongue so to say. Lemon and lime juice are slightly more acidic than vinegar. The higher the acidity the safer the canning. Also, your use less then using vinegar. I prefer the tastes of lemon or lime juice over vinegar, as some people feel it has a milder flavor. I don't remember cilantro in the processing, I use one part cilantro and 2 parts parsley. And I don't cook the herbs, I include raw during the canning. Some people think cilantro by itself is bitter in taste. Another use, and the children may like this, I will blend smooth the salsa (red or yellow) to create enchilada sauce. Enchilada are a tortilla rolled and filled with a seasoned mixture, usually containing meat, and covered with a sauce flavored with chiles.The whole thing is baked in the oven with cheese on top. The people I know where family friends, the husband "English" and wife ex-Amish. I believe during rumspringa she decide to move on from the church. They met and fell in love, married after her decision not to baptize. Well look forward to watching more videos.

we also had double tubs from the wringer washer, I would wash jars in those tubs, would wash cabbage and grate on my great grandma's cutting board, used those tubs for so much large processing of of veggies....in the south it is hot the tubs were under shade trees....one summer mama and I put up 1200 jars of food...she would can tomato juice in gallon jars....jelly in quart jars, my family would go through the different jelly jars that she did like you started using quarts....
Great video. If you want a little tip for using the chopper, try putting a damp tea towel under the chopper to stabelise it to stop it slipping around. The salsa looked delicious ❤

I found out that a black Sharpie marker will write on a jar when you need to label it and when you want to reuse the jar for something else, all you have to do is scrub the writing off with a rag and dish soap. My maternal grandmother used to take green tomatoes and pickled them like dill pickles or she would make a green tomato pie, substituting the green tomatoes for the apples in an apple pie recipe. My other grandmother would take all the leftover vegetables at the end of the season and make chow-chow bread and butter relish. MMM! Good!

Growing my own plants from seed from Bakers creek (Mortgage Lifter and Brandywine) in my garden loaded with old barn manure, chicken poo and mulch gave me huge plants that came out the top of the cages and I added strings and they grew up and finally trailed along sideways. I had around 150 quarts off a 20' row easy not to mention tons I passed along. My all time favorites. Well worth starting.

I made this just now - by myself, no wonderful blessings helping me - I followed the ingredients to a T and only got 4 quarts - what a bummer because in tasting it - it was marvelous! No sugar added. Maybe if the extreme heat doesn't kill the tomatoes we will try again - How do you measure your 14 cups? I measured it after they were cut and drained .. . Thank you!
When you were water bath canning the blueberry pie filling, the water did not cover the jars. I thought it had to cover the jars by an inch or two when you're doing water bath canning.

Ok I did this! Here’s what I did. We were blessed with overachieving tomato and bell pepper plants. I used a chopper like you have as well. I did take a spatula and kind of squash them to get more liquid out. I ended up with a quart of tomato juice btw for whatever later. I got about 15 well drained tomato cups, 3 cups HG coarsely
chopped onion, 3 big cloves of HG garlic chopped fine, and I increased bell to 1.5 cups chopped. I used one HG red jap and one HG green jalapeño, finely chopped. 2tsp cumin 1Tbsp Chili powder abd 3 Tbsp kosher salt the ACV etc everything but what I stated was as directed. I added 2Tbsp sugar because im accustomed to store bought but if you aren’t then blow off sugar or decrease.
Boiled around 45” burned the bottom but it didn’t hurt it one bit (don’t ever scrape burnt part). Was exhausted so left it overnight to meld. Heated today and water bathed. Before I waterbathed I put a tad bit in fridge. It is EXCELLENT. I would literally search to repurchase in store. The peels and seeds didn’t bother us one iota. Our turned out between mild and medium heat(hubby doesn’t like heat). It made 5 pints exactly and was the consistency sort of like pace or other store bought. Thick and also thin creamy and also chunky and not chunky so all different but worked out so well. Perfect. I cannot thank you enough! Btw my tomatoes were a mixture of whatever grew some red some orange but all were ripe and some a bit overripe. Took only big cores abd bad parts out.

Edit:Next time I will add one more cup of bell abd one more cup onion and one more small jalapeño as well as reduce sugar to 1 Tbsp. Sorry so long but I’m trying to help others.

So a year later, I’m watching your video and having the same panic attack about my tomatoes. We had a really hard late frost with temps down into the upper 20’s at the end of may and first of June. My husband and I had to run out every evening and throw stare on top of as much as we could and saved most of the tomatoes and green beans but I do believe it caused everything to be delayed. The looked terrible but came back like a shinning star so I have high hopes for the tomatoes, it’s just nerve wracking!

Excellent. I never understand removing seeds in Zucchini or tomatoes. Then there are jars of FIBER you can buy. Why? Eat your fruits and veggies, as is. No peeling. This is what I do. Good job, Mrs. Zimmerman. I am on a salsa kick, so this is perfect. Thank you.

Watching your videos is so relaxing. It reminds me of my childhood. I was raised in Church of the Brethren - - a few steps more modern than the Mennonites. just wanted to add a little note that you probably already know. We live in an area with hard water. I put 4 tbsp of vinegar in my canner and it limits the calcium on the outside of the jars.

RuthAnn I love your channel more than you will ever know. I didn't know yellow tomatoes were low acid. I have canned 51 quarts and 122 pints of YOUR pasta sauce, 9 pints of diced, 25 various sizes of "green" relish and 30 pint V-8 juice all after a devastating hailstorm the end of June. (I am still canning as they ripen in our basement)‐As I watched you drain the tomatoes for your relish, I wanted to share the Lord whispered into my inexperienced ear to make the juice off my preciously canned tomatoes into V-8 juice!! ❤ I took some V-8 juice to our little church for snack/fellowship time and everyone LOVED IT! I feel so blessed to have the Holy Spirit whispering into my inexperienced ear and you on RUclips! GOD IS GOOD!!

Used 6x28 oz cans of diced tomatoes because of hail storms and 100+ heat, my tomato plants Haven’t been producing. My yield was 9 pints. My sampling while it was simmering indicates a great tasting salsa. Thank you

Your yellow tomatoes look like my heirloom tomatoes called "Rainbow"... They have red stripes going through them that are tasty and beautiful. Good for your husband who was sensitive to tomato acid.

In the past I lived in Lancaster county in Pennsylvania and if I had a question on any aspect of homesteading, I would seek out the mentoring from my Mennonite/Amish brothers and sisters. They are the salt of the earth. I learned a lot and I'm a better person for my interaction with this community. Thank you and I subscribed and hit (smashed) the "thumbs up" button. We are programed to use vinegar 5% or higher for proper shelf life. With My salsa (pico de gallo (red-tomato) or salsa verde (green/yellow-tomatillo,) I use lemon or lime juice for a bright flavor that doesn't bite the tongue so to say. Lemon and lime juice are slightly more acidic than vinegar. The higher the acidity the safer the canning. Also, your use less then using vinegar. I prefer the tastes of lemon or lime juice over vinegar, as some people feel it has a milder flavor. I don't remember cilantro in the processing, I use one part cilantro and 2 parts parsley. And I don't cook the herbs, I include raw during the canning. Some people think cilantro by itself is bitter in taste. Another use, and the children may like this, I will blend smooth the salsa (red or yellow) to create enchilada sauce. Enchilada are a tortilla rolled and filled with a seasoned mixture, usually containing meat, and covered with a sauce flavored with chiles.The whole thing is baked in the oven with cheese on top. The people I know where family friends, the husband "English" and wife ex-Amish. I believe during rumspringa she decide to move on from the church. They met and fell in love, married after her decision not to baptize. Well look forward to watching more videos.

I just said the same thing. Mid August and my barn is full of spiders and webs, garden is already down due to weekly cold fronts. Weirdness. we also had double tubs from the wringer washer, I would wash jars in those tubs, would wash cabbage and grate on my great grandma's cutting board, used those tubs for so much large processing of of veggies....in the south it is hot the tubs were under shade trees....one summer mama and I put up 1200 jars of food...she would can tomato juice in gallon jars....jelly in quart jars, my family would go through the different jelly jars that she did like you started using quarts....

Great video. If you want a little tip for using the chopper, try putting a damp tea towel under the chopper to stabelise it to stop it slipping around.

I found out that a black Sharpie marker will write on a jar when you need to label it and when you want to reuse the jar for something else, all you have to do is scrub the writing off with a rag and dish soap. My maternal grandmother used to take green tomatoes and pickled them like dill pickles or she would make a green tomato pie, substituting the green tomatoes for the apples in an apple pie recipe. My other grandmother would take all the leftover vegetables at the end of the season and make chow-chow bread and butter relish. MMM! Good!

We are struggling here in Ontario Canada to get any ripe tomatoes, so much rain.
Growing my own plants from seed from Bakers creek (Mortgage Lifter and Brandywine) in my garden loaded with old barn manure, chicken poo and mulch gave me huge plants that came out the top of the cages and I added strings and they grew up and finally trailed along sideways. I had around 150 quarts off a 20' row easy not to mention tons I passed along. My all time favorites. Well worth starting.

I made this just now - by myself, no wonderful blessings helping me - I followed the ingredients to a T and only got 4 quarts - what a bummer because in tasting it - it was marvelous! No sugar added. Maybe if the extreme heat doesn't kill the tomatoes we will try again - How do you measure your 14 cups? I measured it after they were cut and drained .. . Thank you!
When you were water bath canning the blueberry pie filling, the water did not cover the jars. I thought it had to cover the jars by an inch or two when you're doing water bath canning.
