  • Grits may be the most underestimated of all Southern foods - but they form the foundation of some of the most beloved, (and despised) Southern dishes. For this episode of Nourish, we go looking for lost and found varieties of heirloom corns that made grits such a Southern staple.

    I’m sad to see this program is no longer supported! I love to see almost anthropological view of nutrition and food ways. I hope they bring it back.

    I like my grits made with milk and lots of butter. I usually double the batch to make squares for open faced sandwiches. The left over grits get quickly gets spread onto a greased jelly pan and once cooled cut into squares that will be crisp fried before topping - examples -Breakfast (topped w/fried egg & bacon bits or chopped sausage), Lunch or dinner (topped tomatoes, onions & okra, or black-eyed peas or pepper steak or shrimp gumbo). I had polenta cakes at a fancy Italian restaurant and had an "aha" moment...

    I love grits with cheddar cheese, a peppered fried egg, and bacon. And I'll eat that at any time of day.

    In Thailand, there is a rice congee called โจ็กหมู่ไส่ไข่นะครับ---"joke moo sai kai." This is rice congee with pork and 'things' in it. The cooked rice congee is called "joke." If you ever get to Vietnam, Laos. Cambodia, Thailand, Taiwan, etc. show up and any eatery and ask for "joke." You will NOT be let down. It is considered farmer food. Costs about $1-2 for each bowl. Lasts all day! Extremely nourishing.

    I don't even like grits. But after watching, I feel like I have to go out of my way now to make some for myself and give them another shot. Fantastic work, Just discovered your channel. I'm a Texas Retail Meat Cutter and I'm loving your stuff!

    My fave is shrimp and grits, but growing up and as I make for myself, I love grits with a cheddar cheese and salted butter‼️

    In Malawi central Africa,we call this "misele" we still eat this but it's mainly a breakfast we mix it with sugar or honey...the similarities!!

    My maternal family is from South Carolina and I loveeee grits dishes! 😛😋 I love cheese grits , sweet grits , and grits with catfish alongside black eyed peas.

    The original southern comfort. Ours were always a simple affair growing up. Salt, pepper, and butter were the chief flavorings. Come to think of it, that's how the grits at a sandwich & breakfast line I volunteer at are served

    Sometimes I eat grits with butter, salt, pepper. Other times with cheese, butter and salt. Not often but occasionally with sugar or cane syrup. I love grits with fried fish or shrimp.

    Many of us do quick grits because regular grits are time consuming when you work. I just hate lumpy stuck to the pot grits. I will not eat microwave grits. I have had grits sausage and eggs and biscuits for dinner when I come home from work, you just feel you want breakfast for dinner. Shrimp and grits are so filling and delicious. I love fried fish and grits too; nothing is more tasty to me than good buttery grits. The maize is a Native American tradition.

    I’m telling you, this episode learned me plenty! (I know this is not proper English) in case any of my former educators are watching.🤣 I made fried catfish and grits last Friday night! No wonder they were a total match. I love yellow and white grits, but can only find white in Houston, and only quick grits. I would love to try some of the varieties mentioned in the show. Since it’s the holidays, I may as well treat myself! Also, I grew my first organic garden this year, and since that makes me an expert, I must find corn seed to try next year.🌽 Another amazing episode. Thanks Dr.

      How did I forget to mention CushCush. I haven’t had it in years, and it may bring me to tears if my mom makes it today. It was my favorite. We enjoyed it with milk like cereal as kids, and I preferred it to t-bones for dinner growing up. What a sweet memory!

      BTW...Im in Texas now (you mentioned Houston) but family from LA, MS, GA. Im trying organic gardening as well. My neighbors and I plan to start a neighborhood garden soon.

    love these videos. Now I want grits. Makes me wish that these old heirloom foods, growing practices, and dishes would night die out. All people should have access to the foods of the ancestors, but to much has been lost overtime or it's not economically affordable. I bet you if we still ate food this way the obesity problem in America and around the world would not exist.

      Ant Learn :) In Africa we have a lot of corn / mielies. So we eat a lot of cornmeal. The best is for breakfast where we eat it with slightly bigger pieces than creamy meal. This makes for a nuttier, yummier and far less processed bowl of porridge than having wheat. (And a lot fewer people are intolerant to it than to the gluten in wheat.)

    ...In New Mexico, we add Hatch green chiles (hotter the better) and cheddar cheese and an egg.

      This was purposely done as I felt that not many people understood how grits and corn meal were made. There are plenty of shows that tells one how to make different dishes

    I didn't grow up with grits but we made "corn meal mush" as an alternative to oats or wheat farina (or similar grains) when we ran out of those. I always loved the corn flavor, and finally got to eat grits when I was in my 20s and found stone ground grits to make at home in my 30s. Such a good staple food! Love learning more about the history of our food! ❤️
