Nothing is better than a hit bowl of soup in the winter. A teaspoon of minced ginger adds a bit of extra flavor and zing, not to mention the health benefits of ginger.
Made the soup and it was a hit. So very good. I didn’t have veggie stock, so I used chicken stock. Also used curry as a sub. The lemon juice really brightened up the soup-I wasn’t sure about the lemon, but it worked. I’m thinking the leftovers will be even better tomorrow! Thanks again John!
Gotta try this. Here in Trinidad we usually make stewed lentils and served with rice and some sorta protein(usually stewed as well). Never had this as a soup. So definitely gonna try this recipe out too. And it's nice and healthy 😁 thanks for sharing xoxo love from Trinidad
I love that you explain how to use the pots depending on the type you are using to cook in. People tend to leave out that information in cooking videos. Not everyone is going to have the gourmet pots and pans. Thank you for that info❤️
I love lentils. We had them in many forms when my kids were growing up. They still love lentils. This soup looks delicious and familiar. I would serve with cornbread or rice or both.
I love lentil soup. I use the same veggies but instead of kale I use spinach. I like to add smoked paprika to it. I've never added the lemon or evoo/vinegar but will try it one of these days. Thanks for the recipe.

I just made this soup and finished a large bowl. It was sooo delicious! It had so much flavor and was warm and inviting on this cold winter day. I really liked this recipe as I’m a vegetarian. I only added a teaspoon and a half of paprika. Just so scrumptious! 😋
This is called Sambar in india. its a staple food of south indians (like cooked atleast once or twice a week). Its great to see the same food patters across different cultures and continents.
That's how I've made it for years except no coriander, cumin, lemon or oil. I don't bother washing lentils and do use a pressure cooker (very fast). When I want to vary the flavor of individual portions, I add a little balsamic vinegar or smoke flavor or even BBQ sauce. There's a big variety of the latter available, so lots of options. Make about 6 qts. at a time since it freezes well. Rustic sourdough bread (if my starter is especially active) and cornbread go well with it. If you have the time and inclination, make your own beef stock...much better than commercial. Here, too, a pressure cooker quickly extracts all the flavor.

I made this tonight and was SUPER happy with how it came out! The kale adds a wonderful flavor, surprisingly. We almost didn't add it in then decided to and so glad we did! I plan to make this again sometime 😋

Lentils are super popular in France. This soup looks very hearty for a veggie soup. I am allergic to celery so I will use fennel instead. When you cook it with onions and carrots, it looses that licorice taste and is tasty.

My experience with lentils is subtle in your recipe. I found out a long time ago not to cook them in salted water, but to wait with the salt to the very end. Otherwise, they seem to never get soft. You did this so smoothly, and I am glad to see it. Lemon as a top note sounds delicious.

Adding red pepper and lemon juice makes iron from lentils easier to absorb. Also for fussy eaters and those who don't like chunky veg, you can leave your vegies whole and once cooked remove, blend and add back in. Also a bit more liquid will make it heartier. Adding vinegar is such a Greek thing to do, well done on your research and execution for this recipe!!
My husband loves lentils (me too), so I'll definitely make this! I'll have to put the onion in with the two cups of soup and blend it (he can't tolerate chopped onions, a texture thing) and will sub chopped spinach for the kale. Thanks John!!!

All the ingredients look very good I use the same recipe. I add a little extra though I put some bacon in the pot render the fat add all ingredients to the pot gives it nice body. Same with collard greens cook collard greens with ham hock bone or bacon ads body.
I also add a wonderful nice and dried slim smoked sausage. Like a skinny chorizo or pepperoni. Not too fat , but needs to be dried well so it releases its slight taste barely and doesn't boil to pieces. If the sausage is 6-8 inches , i cut it into 2-4 pieces. It is not in here to add flavor to the whole soup/lentil dish but really just is wonderful to find a little piece . I guess good dried cabanozzi work too.
I just made this delicious lentil soup/stew. It WAS delicious! As I had some frozen kale, I used that instead of fresh and worked well as a substitute. Thank you, John for this wonderful recipe.
I love lintel soup in a variety of ways... this vegan option tastes great but we've also used ham and add a little bit of molasses! It's so good! Also... a dollop of sour cream is always nummy.

Gonna try this. Here in Northern Ireland wee use red lentils and ham on the bone for flavour. Chop the ham up and add at the end

Italian sausage sounds so good. I like a little bit of heat so I would use the spicy hot sausage and perhaps some chili flakes. Yum!

Jalapeños ,sweet potatoes ,and curry powder. I top it off with avocado or sometimes a spoonful of hummus it’s delicious,filling and warm and cozy.

That consistency is more in line of being a lentil stew instead of a soup if it has little to no liquid.
Amazing recipe John. I was guessing evoo. Coming from an Italian heritage, we did an evoo drizzle and a sprinkle of pecorino. Can't wait to try it!
