    This is one of my favorite snack but I’m so intimidated by the process of how to make it. Your process seems to be pretty simple and straight forward. Let me work up some motivation and will try to attempt it.

    In a 8x8 pan like hers, this will yield 18 squares. To make half (or a bit more than half), use a loaf pan. Foil loaf pan works if you don’t have a glass one. Or you can use an aluminum pan but make sure to use PAM or olive oil spray to lightly grass it. Silicone pan would work too.

      No need for oil spray, the coconut contains oil so once cool it’ll remove very easily.

      I have not tried but the coconut milk gives it a nice flavor. I don’t think regular milk will.

    I will use your recipe soon but Sometimes I find the layer is chewy. How do I prevent this from happening?

      Too much tapioca starch will cause chewiness, a tiny bit more rice flower will make it less chewy but too much rice flour can also cause the layer cake to be hard. This recipe is a little chewy. I find playing with a recipe and adjusting it to your liking is best.

      Hi, time varies on how thick your layer is. I steamed mines for 5 minutes.

    Instead of rice flour could you use glutinous rice flour? Or would it not work out with glutinous rice flour

      Rice flour is need to make it less sticky.

      Coconut milk is fine, I like this brand because it is stronger on the coconut smell. I’ve used several different coconut milk before (most have the Na va picture on).

      Sorry I’m not sure. You can try cake flour but I think the consistency will be different.

      I usually just use all purpose flour and you can't really tell the difference. But you can't substitute the tapioca starch.

      You can make rice flour at home. All you need is to pulverize moistened raw white rice (any grain will do, but it must be the non-instant variety rice) into a high grade blender, remove the contents into a bowl, and let it air dry in your fridge in a bowl. You can even freeze it to save for future use. Just RUclips search “how to make rice flour”. It’s simple!

      Sorry it didn’t turn out, it does run on the sticky side but should not be overly sticky. I’ll update with a new video with a less sticky texture whenever I have time.
