I'm from Indonesia, the food also sells a lot of the cake, the layered one is called the "Lapis" cake, and the one that looks like a turtle shell is called cake tok
Majority of Taiwanese is Fujianese, just as South East Asian "Peranakan" came from Fujian too, so the technique is similar. But in Indonesia we also use pandan for green coloring and fragrance and some also use coconut for many of peranakan cuisine, ingredients that not commonly found in Taiwan and Mainland China.

小時候我媽總愛買九層糕、她門那年代有這種點心吃就很滿足了,我吃到怕! 但現在長大了,逛老街時,看到都會買一個來吃! 古早味~
大家在問蒸籠玻璃紙的問題,其實古早時是用紗布或棉布做蒸籠布,但約四五十年前台灣就有些商店開始用玻璃紙蒸粿,這些是耐高溫140度的PP塑膠紙,因為蒸籠内的溫度不會超過100度,因此只要耐熱超過120度的塑膠都不會溶化,但是在蒸製的過程中有多少塑料釋出則不得而知。
確實注意到稍早製粿的視頻有使用塑膠材質包裝什麼的, 頓時腦海裡出現問號: "欸, 用那麼多塑膠產品, 環保嗎?!" 難道不能考慮使用較好些的替代品, 如西方烘培使用的烘培紙(parchment paper), 還是模具多抹些油, 避免沾黏?

老實說,我買過,普通,沒有很好吃
小時候,阿嬤做的紅龜粿也是生皮包饀蒸的。饀的味道都會在皮裡,花生會變成溼的,好好吃。
現在北部的紅龜粿/草仔粿,都是皮蒸好,饀煮好,然後現場包在一起裝袋賣。吃起來就是皮是皮饀是饀,花生口味的還切開來花生粉掉滿地@@...實在不習慣
我住北部,可是我阿姨以前賣的時候也是生皮包餡蒸的,我家附近賣的也是古早做法,你說的粿我到沒看過?
我比較在意的是包裝用掉太多的塑膠,希望有較環保的替代方式。

這是一種用跟玻璃一樣材質做成的紙,具有透氣性及耐高溫的特性,耐高溫230度,無毒性!

萬丹新庄有一台貨車賣五層粿,但是是鹹的,沾醬油膏吃,還能配大腸香腸。
建議戴上手套、改用金屬水瓢,視覺上會更好!
乾脆用無塵室 穿無塵服來做粿,良率會更好😂
