Mexican Street Corn Potato Salad | The ULTIMATE Salad for the Fourth of July!!

- You are going to flip over this salad! Its a fusion of All American Potato Salad and Mexican Street Corn! It is PACKED with so much flavor it will make regular potato salad taste boring!
You can make it ahead of time up to 2 days and tastes even better!

Ingredients:
1 1/2 lb potatoes
3 ears fresh corn cooked and kernels removed
1/4 C finely diced red onion
1/4 C Mild Hatch green chiles
1/2 C Sour Cream
1/4 C Mayonnaise
1/2 C chopped cilantro
1/2 C Cotija Cheese
1 t Chili Powder
1/2 t cumin
salt and pepper to taste
